Yam is called Surnu in Konkani. Surna Tambude is a sweet and spicy Konkani dish served as a side dish with rice.

Ingredients:-
Yam/ Surnu. - a small piece
Jaggery -a small Lemon size
Tamarind. - a small lemon size.
Salt. -to taste.
For roasting the ingredients:-
Dry Red chillies. -8 or 10
Coriander seeds. -2 tsp
Mustard seeds. -1tsp
Fenugreek/Methi seeds. -1/4 tsp
Asafoetida/ Hing powder. -1/2 tsp
Turmeric powder. 1/4 tsp
For Seasoning:-
Coconut oil/ Oil. -1tsp
Mustard seeds. -1 tsp
Curry leaves. -1 spring
Instructions:-
1. Chop and remove the thick outer skin of a small Yam piece. Clean and chop the Yam piece into medium square pieces.Keep aside.

Wash the Yam pieces in water several times to remove the mud and pressure cook the chopped Yam pieces till soft adding required amount of Water.
2. Grate a small piece of Jaggery and keep aside.
3. Soak a small lemon size Tamarind in 2tbsp of warm water for 5 minutes and keep aside.
4. Roast the ingredients given under one by one:-
Heat 1/4 tsp Oil in a pan and roast Red chillies till crispy and keep aside on a plate.
In the same pan add Coriander seeds and roast for a second and keep aside on the same plate.
Add Methi seeds and then Mustard seeds in the same pan and roast both for a second and keep aside on the plate.Add Turmeric powder and Hing powder and mix well with the roasted ingredients and keep aside.
5. Grind the roasted ingredients with soaked Tamarind adding little Water to a smooth paste and keep aside.
Method:-
1.In a cooking vessel add the cooked Yam pieces, ground Masala paste and little water. Mix well and boil for few minutes.
2. Add required Salt into the cooking vessel and mix well.
3. Add the crushed Jaggery and mix well with the cooked Yam pieces and ground Masala paste. Boil again on low flame.
4. When the Yam pickle becomes little thick switch off the flame.
5. Heat oil in a small pan and splutter Mustard seeds and saute well.Add Curry leaves and fry for a second and switch off the flame.
6.Add this seasoning into the cooked Yam pickle in the cooking vessel.
A tasty, yummy, lip smacking and delicious Surna Tambude is ready to serve as a side dish with Rice, Dosa or Idli.
