Bitter gourd is called Karathe in Konkani. Karathe Puddi gallele is a very tasty and yummy and little tangy Bitter gourd dry Pickle goes well as a side dish with hot steamed Rice .
The following ingredients are needed to Bitter gourd dry pickle.
Ingredients:-
White bitter gourd. -1 cup chopped
Dry red chillies. -5
Ground nut. -2 tbsp
Urad dal. -1 tsp
Coriander seeds. -1 and 1/2 tsp
Fenugreek/Methi seeds. -1/2 tsp
Tamarind. -a small gooseberry size
Oil. -2 tsp+1/2tsp
Mustard seeds. -1 tsp
Curry leaves. - 1 spring
Instructions:-
Wash and chop a medium size White Bitter gourd lengthwise and remove all the seeds.Then slice into semi circle roundels. Apply little Salt and keep aside.After few minutes sequeez the Bitter gourd pieces and keep aside.
Heat 1/2tsp Oil in a pan and roast the Red chillies till crispy and keep aside.
In the same pan roast 2 tbsp Ground nuts and keep aside.
Roast Urad dal till golden colour and keep aside.
In the same pan add dry Coriender seeds and Fenugreek/ Methi seeds till an aroma comes.
When cool, grind all the roasted ingredientsalong with a small goose berry size Tamarind to a coarse powder without adding Water.Keep aside.
Method:-
Heat 2tsp Oil in a pan and splutter Mustard seeds and saute well.
Add Curry leaves and fry for a second.
Add the squeezed Bitter gourd pieces into the pan and saute well and fry for 5 minutes in a low flame.
Add the coarsely ground masala powder and saute well for 2 minutes.
Add Salt and saute well till the Bitter gourd pieces coat well with the ground masala powder.
When cool store it in a sun dried air tight container and keep it in the refrigerator.
Can be used 3 to 4 days or a week.When cool, grind all the roasted ingredientsalong with a small goose berry size Tamarind to a coarse powder without adding Water.Keep aside.
