Yam is called Chena in Kerala.Chena Erissery is a traditional and delicious Yam stir fry in Kerala made with Coconut Masala paste.Erissery is prepared in various ways in Kerala.Chena Erissery is one of my favourie dish.The recipe is very simple and easy to prepare and this tasty and yummy dish goes well with Rice.
The following ingredients are needed for preparing Chena Erissery.

Ingredients:-
Yam. - a small piece.
Turmeric power. -1/4 tsp
Salt. -to taste.
For grinding the Coconut masala paste:-
Coconut grated. -1cup
Green chilly. -2
Cumin seeds/ Jeera .-1tsp
Black Pepper Corn. -2tsp
For Seasoning:-
Coconut oil. -2tsp
Mustard seeds. -1tsp
Dry Red chilly. -1(broken into halves.)
Curry leaves. -1spring
Instructions:-
Chop and remove the outer skin of a small Yam piece.Chop the Yam piece into small cubes and keep aside.
Crush the Black Pepper corn and keep aside.
Grind grated Coconut, Cumin seeds, Green chillies and crushed Pepper corn to a smooth paste adding very little Water and keep aside.
Method:-
In a cooking vessel cook the chopped Yam cubes with Turmeric powder, Salt and required Water till soft.Discard the Water and keep aside the cooked Yam cubes.
Heat 1tsp Coconut oil in a pan on medium flame and splutter Mustard seeds and saute well.
Add dry Red chilly broken into halves and fry well in oil.
Add Curry leaves and fry for a second.
Add the cooked Yam cubes and saute well.
Check Salt and add if needed.
Add ground Coconut Masala paste and mix well and cook for a minute .
Stir well till the Coconut masala paste mix with the cooked Yam cubes.
Add 1tsp Coconut oil over the Yam Erissery and mix well and switch off the flame.
Chena Erissery/ Yam Stir fry in Coconut Masala is ready to serve with Rice.
