KARBAVA THUMBALI / Curry leaves Chutney

Curry leaf is called Karbavu in Konkani.The following ingredients are needed to prepare this delicious Curry leaves Chutney.

Ingredients:-

Curry leaves.      -1cup tightly packed
Grated Coconut. -1/2 cup
Green chillies.    -2
Shallots.              -2
Ginger                 - a small piece
Tamarind.            - a chick pea size
Salt.                     -to taste.


Instructions:-

Wash the Curry leaves in water and keep it in a colander to drain.

Wash and chop Green chillies and keep aside.

Peel and roughly chop a small piece of Ginger and keep aside.

Peel and roughly chop Shallots and keep aside.

Soak Tamarind in 2tbsp boiled and cooled water and keep aside.


Method:-

Dry roast grated Coconut, Curry leaves, chopped Green chillies, roughly chopped Ginger and Shallots except for a minute on medium low flame.

When cooled grind all the ingredients together with soaked Tamarind and Salt.

Add little Water and blend to a smooth chutney.

Curry leaves chutney is ready to serve as a side dish with Idli, Dosa, Rice etc.
