Ghosale Upkari [konkni recipe] / Ridge gourd Stir Fry.


Ridge gourd is called Ghosale in Konkani.Ghosale Upkeri is a very tasty dish made with tender Ridge gourd and goes well as a side dish with Rice.

The following ingredients are needed to prepare Ghosale Upkari.

Ingredient:-

Ridge gourd.   -2 (tender)
Green chillies. -3
Salt.                 -to taste

Instructions:-

Wash the tender Ridge gourd and trim both the ends and chop into roundels and then chop into 1/2 inch lengthy pieces and keep aside.

Wash and half slit Green Chillies lengthwise and keep aside.

Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add half slit Green chillies and saute well and fry in oil for the a second.

Add the chopped tender Ridge gourd pieces and saute well for a second.

Add required Salt and mix well.

Sprinkle little Water and boil on low flame.[Water will come from Ridge gourd itself when cooked)

Cover and cook the tender Ridge gourd pieces till soft and the water evaporates.

Switch off the flame

A tasty Ghosale Upkari is ready to serve as a side dish with Rice.
