Coriander leaves are called Kothambari pallo in Konkani.A tasty and healthy Coriander leaves chutney can be prepared with the following ingredients.
Ingredients:-
Coriander leaves. -a bunch with stems
Red chillies. -4
Grated Coconut. -1/2 cup
Shallots. -6
Tamarind. - a small piece
Salt. - to taste
instructions:-
Wash and clean rhe Coriander leaves with stem.Finely chop and keep aside.
Method.
Heat Oil in a pan and roast Red chillies and fry for one minute.
Add shallots and fry for a minute.
.
Add grated Coconut and fry for one minute.
Add the chopped Coriender leaves with stem and saute well.
Switch off the flame and add Salt and a small Tamarind piece.
Grind all the ingredients together to make a smooth Chutney.
Heat oil in a pan and splutter Mustard seeds .Saute well and switch off the flame.
Add the seasoning into the Coriander leaves Chutney.
A tasty Coriander leaves Chutney is ready to serve with Dosa, Idli or Rice as a side dish.
