MIXED FLOUR DOSA

Dosa made with mixed flours[Rice flour,Wheat flour,Maida, Sooji Rava] adding Carrots and Curry leaves and seasoned in Coconut oil with Mustard seeds, Cumin seeds, Green chillies and finely chopped Onion is called Mixed Flour Dosa and can be served hot with Coconut Chutney.

The following ingredients are needed to prepare Mixed Flour Dosa.

Ingredients:-

Wheat flour.   -1 cup
Sooji Rava.     -3/4 cup
Maida.             -1/2 cup
Rice flour.       - 1/4 cup
Carrot              - 1
Curry leaves.    -1 spring

For Seasoning:-

Coconut oil.       - 1/2 tsp
Mustard seeds.   -1/4 tsp
Cumming seeds. -1/4 tsp
Green chillies.    -2
Onion.                 -1

Instructions:-

Wash and finely chop Green chillies into thin roundels and keep aside.

Wash and finely chop Curry leaves and keep aside.
Peel, wash and finely chop Onion and keep aside.

Peel, wash and grate Carrot and keep aside.

In a vessel soak Sooji Rava adding enough Water to immerse the Rava for 30 minutes.Mix the soaked Rava well with your hands.

Add the Wheat flour, Maida and Rice flour in the same vessel and add required Water.

Add required Salt and mix well with the soaked Sooji Rava and mix all the flours together without any lumps.

Add grated Carrot, grated Coconut and chopped Curry leaves and mix well with the batter.

Add Water to make a thin batter.

Heat Oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.

Add finely chopped Green chilly roundels and saute well.

Add chopped Onion and saute well till the Onion becomes soft and switch off the flame.

Pour this seasoning into the batter and mix well.


Method:-

Heat a dosa tawa on medium heat and spread oil on it.

Mix the batter well and take a ladle full of mixed flour batter and spread it on the dosa tawa.

Cover the tawa with a lid and cook till roasted on one side.

Remove the lid and apply little oil on the dosa and flip it to cook on the other side.

When cooked on both sides remove the dosa from the heat with a flat spatula .

Mixed flour dosa is ready to serve with Coconut Chutney.
