Tapioca is called Kappa in Kerala.Tapioca sweet dosa is sweet dosa dish made by using raw Tapioca, soaked Raw Rice, Coconut, Jaggery and Cardamom powder We can also prepare Tapioca dosa / Kappa dosa without adding Jaggery and Cardamom.
The following ingredients are needed to prepare Tapioca sweet dosa.
Ingredients:-
Tapioca grated. -2cup
Raw Rice. -1cup
Coconut grated. -1/2 cup
Jaggery grated. -1/4 cup
Cardamom powder. -1tsp
Sal - a pinch.
Instructions:-
Wash and soak Raw rice in water for 5 hours.
Peel the outer skin and wash Tapioca in water. Grate the Tapioca with a grater and keep aside - about 2 cup.
Grate1/4 cup Jaggery with a kitchen knife and keep aside.
Grind together soaked Rice, grated Coconut, grated Tapioca and grated Jaggery, with little Salt and 1tsp Cardamom powder to a smooth paste adding very little Water.
Mix the batter and keep aside for 30 minutes.. No need to ferment the batter. We can make dosa immediately.The consistency of the batter is like a normal dosa batter.
Method:-
Heat a dosa tawa adding little ghee on it.
Mix the Tapioca batter with a laddle and take a laddle of batter and pour it on the tawa and spread it to make thin dosa.Cook for 2 minutes on medium low flame.
Add little ghee on sides and top of the dosa and flip it to cook the other side.
When cooked flip again and transfer to a serving plate.
Repeat the above process and prepare Tapioca dosa with the remaing batter using Ghee.
A tasty, yummy, sweet and delicious Tapioca sweet dosa is ready to eat
