Capsicum Masala Gravy is a tasty and delicious masala curry made with Green Capsicum / Bell Pepper goes well with Rice, Chapathi, Phulkas etc.
The following ingredients are needed to prepare Capsicum Masala Gravy.
Ingredients:-
Capsicum. -2 medium size
Green chilly. -1
Garlic. -2 crushed
Ginger garlic paste. -1tsp
Cumin seeds. -1tsp
Fennel seeds. -1tsp
Onion. -2 medium size
Coriander powder. -2 tsp
Red chilly powder. -1 tsp
Garam Masala powder. -1/2 tsp
Kasurimethi. - few chopped
Tomato . -2 medium size
Cashews. -10
Kuskus. - 1tsp
Salt. -to taste
Instructions:-
Wash and chop Capsicum (Bell Pepper) into medium cubes.
Heat little oil in a pan and saute Capsicum cubes for few minutes and keep aside.
Peel, wash and chop Onion into medium cubes and keep aside.
Peel and crush Garlic and keep aside.
Wash and slit Green chilly and keep aside.
Chop Kasuri methi and keep aside.
Wash and finely chop Tomatoes and keep aside.
Boil 10 Cashewnuts in 1cup of water for 2 minutes and switch off the flame and soak the boiled cashew nuts in the same hot water for 5 minutes.
Grind the soaked Cashews along with finely chopped Tomatoes and Kuskus to a fine paste and keep aside.
Method:-
Heat Oil in a pan and add Cumin seeds and Fennel seeds and saute well.
Add slit Green chilly and fry well.
Add crushed Garlic and saute well.
Add Ginger Garlic paste and saute well till the raw smell of the Garlic goes off.
Add chopped Onion cubes and little Salt and saute well till the Onion become translucent.
Lower the flame and add Coriander Powder, Red chilly powder and Garam Masala powder and mix well.
Add ground paste of Cashewnut, Tomato and Kuskus mixture and stir well.
Add Water to adjust the thickness of the gravy.Check Salt and add if needed.
Add Capsicum cubes and saute well.Boil and cook for 2 minutes and switch off the flame.
Add finely chopped Kasuri methi and mix well.
