VAINGANA BHAJJA PITTO (Brinjal Roast).

Vaingana Bhajja Pitto is a traditional Kochi GSB konkani style delicious and spicy roasted Brinjal masala Curry goes well as a side dish with hot steamed Rice.

The following ingredients are needed to prepare Vaingana Bhajja Pitto/ Spicy Brinjal Roast.

Ingredients:-

Brinjal.                  - 4 medium size
Red chillies.          -6
Urad dal.               -2tsp
Coriander seeds.   -2tsp
Chana dal.            -1tsp
Methi seeds.         -1/4tsp
Turmeric powder. - a pinch
Tamarind.             - a marble size.
Hing powder.        -1/2tsp
Cooking oil.          -2tsp
Mustard seeds.      -1tsp
Curry leaves.         -1spring
Salt.                       -to taste

Instructions:-

Wash and chop Brinjal lengthwise and again chop into 1 inch pieces and keep in water to avoide colour change.

Dry roast Urad dal, Chana dal, Coriander seeds, Methi seeds and dry Red chillies and grind along with a marble size Tamarind to a coarse powder and keep aside.

Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add Curry leaves and Hing powder and saute well.

Add chopped Brinjal pieces and saute well in low flame without adding water.

Add Turmeric powder and required Salt and mix well.

Cover and cook on low flame till the Brinjal becomes soft. Saute in between.

Add the ground spice powder and mix with the cooked Brinjal pieces.Saute well for 5 minutes on low flame and then switch off the flame.

A tasty and delicious Vaingana Bhajja Pitto / Brinjal Roast is ready to serve as a side dish with Rice.
