Olan is one of the impotant Onam sadhya (feast) dishes in Kerala.Olan is a delicious Coconut milk based curry adding Ash gourd, Pumpkin, Black eyed beans,Curry leaves and Coconut oil.
Kerala Olan recipe is simple and similar to the Konkani style Valval recipe.The following ingredients are needed to prepare Kerala style Olan.
Ingredients:-
Ash gourd. -1cup chopped
Pumpkin. -1cup chopped
Black eyed Peas. -1/2 cup
Salt. - to taste
Curry leaves. -1spring
Coconut oil. -1tsp
Coconut milk. - extracted from a medium Coconut.or Instant Coconut Milk Powder.-1 packet
Instructions:-
Soak 1/2 cup Black eyed Peas (Cow peas)for 6 hours .Pressure cook the soaked Black eyed Peas adding little Salt and requird Water for 2 whistles and keep aside.
Peel and remove the outer skin and chop the Ash gourd into medium square pieces Wash well in water and keep aside.
Peel and remove the outer skin and chop the Pumpkin into medium square pieces.Wash well and keep aside.
Extract 1/2 cup thick Coconut milk by grinding the grated Coconut and keep aside.
Again grind the same Coconut grating to extract 2 cup thin Coconut milk by adding required water and keep aside.
Or dilute the ready made Coconut Milk Powder adding required water without any lumps and make thin and thick Coconut Milk.
Method :-
In a cooking vessel add the chopped Ash gourd pieces and Pumpkin pieces and cook by adding 2 half slit Green Chillies, required Salt, 2 cup of thin Coconut Milk and little water till soft.
Add the cooked Black eyed peas and mix well and boil for 2 minutes on low flame.
Add 1/2 cup thick Coconut milk and mix well.When the bubble starts to appear switch off the flame.Do not boil too much after adding thick Coconut milk.
Add fresh Curry leaves into the curry and mix well .
Lastly pour 1tsp Coconut oil over the curry in the cooking vessel.
A tasty and delicious Kerala style Olan is ready to serve with hot steamed Rice.
