Ash gourd Pumpkin Sambar

Sambar is a popular South Indian dish. Ash gourd Pumpkin Sambar is a lentil based Sambar cooked with vegetables like Pumpkin, Ash gourd, Potato and seasoned with Mustard,Jeera and Curry leaves.Adding Sambar powder and Hing powder makes the Sambar more aromatic. Ash gourd Pumpkin Sambar recipe is very simple and easy to make.

The following ingredients are needed to prepare this delicious  and aromatic Sambar.

Ingredients:-

Masoor dal.      -1cup
Pumpkin.          -1cup chopped
Ash gourd.        -1cup chopped
Potato.               -1 medium size
Tamarind.          - a small piece
Salt.                   - to taste
Sambar powder. -2tbsp


For Seasoning:-

Oil.                  -1tsp
Mustard seeds. -1tsp
Jeera.                -1/2tsp
Curry leaves.     -few
Hing powder.     -1/2 tsp



Instructions:-

Wash and pressure cook Masoor dal adding 2cup of water for 2 whistles and keep aside.

Chop and remove the outer skin of the Ash gourd.Wash and chop into 1inch lengthy thin pieces and keep aside.[about 1cup]

Chop and remove the outer skin of the Pumpkin.Wash and chop into 1inch lengthy thin pieces and keep aside.[about 1cup]

Peel and wash 1 medium size Potato into 1inch lengthy thin pieces.keep aside.

Soak a small piece of Tamarind in warm Water for 5 minutes and extract Tamarind juice and keep aside.[about 2tbsp]



Method:-

In a cooking vessel add the chopped pieces of Ash gourd, Pumpkin and Potato and cook well till soft adding 2cups of Water.

Add the cooked Masoor dal .Mix and boil well for 2 minutes.

Add Salt and mix well. Add 2tbsp soaked Tamarind juice. Mix well and boil for 2 minutes.

Add 2 tbsp Sambar powder diluted with  little Water and mix well without any lumps.

Cover the cooking vessel with a lid and boil and cook well for 5 minutes on low flame and switch off the flame.

Heat 1tsp Oil in a pan for seasoning and splutter Mustard seeds and add Cumin seeds and saute well.Add 
Curry leaves and fry well.Add Hing powder and saute well for a second and switch off the flame.

Open the lid of the cooking vessel and pour the above seasoning into the Sambar and immediately close the vessel with the lid to retain the aroma of the seasoning.

A yummy delicious and aromatic Ash gourd Pumpkin Sambar is ready to serve hot with Rice, Dosa,Idly etc.
