Drumstick Leaves Stir Fry (Mashinga Palle Upkari)


Drumstick Leaves are called Mashinga Pallo in Konkani.Mashinga Palle Upkari is a very healthy and tasty Drumstick Leaves Stir Fry and goes well as a side dish with Rice and Dal curry.

The following ingredients are needed to prepare Drumstick Leaves Stir Fry

Ingredients:-

Drumstick Leaves. -2 cup tightly packed.
Mustard seeds       -1tsp
Red chilly powder. - 1tsp
Turmeric powder.   - a pinch
Grated Coconut.    -1/4 cup

Cooking oil.            -1tsp
Salt.                        -to taste

Instructions:-

Clean and seperate the Drumstick leaves from its small branches, stems and small twigs. Discard the stems and twigs. Wash the cleaned Drumstick leaves in water and keep aside to drain the water.




Method:-

Heat cooking oil in a pan and splutter Mustard seeds and saute well.

Add Red chilly powder and Turmeric powder and saute well on low flame.

Immediately add the Drumstick leaves and saute well.

Add Salt and mix well. Cover the pan with a lid and cook the Drumstick leaves on low flame.Stir in between.

When the Drumstick leaves are wilted and change its colour, add the Coconut grating and mix well.

Cover and cook on low flame till all the Water is absorbed. Saute in between and switch off the flame.

A tasty Drumstick leaves Stir fry/ Mashinga Palle Upkari is ready to serve hot  as a side dish with Rice and Dal curry.
