Drumstick Brinjal Potato Stir Fry


The following ingredients are needed to prepare Drumstick, Brinjal Potato Stir fry.

Ingredients:-

Drumstick.          -3
Violet Brinjal.     -2
Potato.                 -2
Mustard seeds.    -1tsp
Dry Red chillies. - 4
Hing powder.      -1tsp
Salt.                     - to taste
Cooking oil.        -1tbsp


Instructions:-

Peel and chop the Drumstick into 2 inch lengthy pieces and keep aside.

Peel the Potatoes and chop into medium size pieces and keep aside.

Wash and chop Brinjal into medium size pieces and keep aside.


Method:-

Heat oil in a pan on medium flame and splutter Mustard seeds and saute well.

Add Dry Red chillies broken into halves and fry well

Add Drumstick pieces and Potato pieces along with 2 cups of water and required Salt. A
llow it to cook on low flame for 5 minutes 

Add Hing powder and stir well.

Add Brinjal pieces and saute well.Cover the pan with a lid and cook the Brinjals until soft on low flame. Stir in between.

Once it is cooked increase the flame and saute well till the water evaporates. Switch off the flame.

A tasty Drumstick Brinjal Potato Stir Fry is ready to serve as a side dish with Rice and Dal curry.
