Brinjal, Drumstick, Potato and Tomato Stir Fry.


The following ingredients are needed to prepare Brinjal Drumstick Potato and Tomato Stir Fry.

Ingredients:-

Green Brinjal.  -2 medium size
Potato.             -1 medium size
Drumstick.        -2
Tomato.            -1medium size
Salt.                  - to taste.



For Seasoning:-

Cooking oil.           -2tsp
Mustard seeds.      -1tsp
Red chilly powder. -3/4tsp
Hing powder.         -1tsp



Instructions:-

Wash and chop Brinjal into 1inch lengthy pieces and keep aside.

Peel and chop Drumstick into 1 and 1/2 inch lengthy pieces and keep aside.

Peel and chop Potato into medium thick pieces and keep aside.

Wash and chop Tomato into small pieces and keep aside.



Method:-

Heat cooking oil in a pan and splutter Mustard seeds and saute well.

Add Chilly powder and saute well on low flame.

Add the chopped Tomatoes and saute well till mushy.

Add chopped Potato pieces and Drumstick pieces and mix well.

Add 1 and half cup of Water, required Salt and Hing powder.Mix well.

Cover the pan with a lid and cook the Potatoe pieces and Drumstick pieces for 5 minutes on medium flame.

Add chopped Brinjal pieces and mix with the potato and Drumstick pieces and cook till soft on low flame.

Saute in between till the water evaporates and switch off the flame.

A tasty Brinjal Drumstick Potato and Tomato Stir Fry is ready to serve as a side dish with Rice and Dal curry.
