Karthya Humman [Konkani Recipe]

Karthya Humman is a Konkani style mixed Vegetable curry.The following ingredients are needed to prepare Karthya Humman.

Ingredients:-

1. Bitter gourd.         -1medium size
2. Potato.                   - 3 medium size
3. Colocasia root.      - 5
4.Dry Mango piece.  -2 small pieces or Kudam Puli - a small piece.
5. Salt.                       - to taste.
6. Coconut oil.           -1tbsp
7. Mustard seeds.       -1tsp
8. Methi seeds.           - few
9. Red chilly powder. -1tsp
10. Hing powder.        -1tsp

Instructions:-

1. Wash, chop the Bitter gourd lengthwise and remove the seeds.Then chop the Bitter gourd into 1inch lengthy pieces and keep aside.

2. Peel the skin and chop Potatoes into 1inch lengthy pieces. Wash and keep aside.

3. Peel the skin and chop the Colocasia roots into 1inch lengthy pieces.Wash and keep aside.

Chopped Bitter gourd. chopped Potato and chopped Colocasia Root.


Method:-

1. Heat Coconut oil in a pan and splutter Mustard seeds and saute well on low flame.

2. Add Methi seeds and saute well.

3. Add Red chilly powder and saute well

4. Add the chopped Potatoes, chopped Bitter gourd and chopped Colocasia roots along with 2 cups of water.

5. Cover the pan with a lid and cook the chopped vegetables till soft.

6. Add required Salt and Hing powder. Mix well and boil for 5 minutes on low flame.

A tasty and delicious Karthya Humman is ready to serve with Rice.
