Karathe Sukke is a Kochi GSB Konkani style coconut based Bitter gourd side dish.The following ingredients are needed to prepare Karathe Sukke.
Ingredients:-
Bitter gourd. -2 medium size
Potato. -2 medium size.
Dry Mango piece. - 2 small pieces
Salt . - to taste
For grinding the Coconut masala paste:-
Grated Coconut. - 3/4 cup
Dry Red chillies. -5
Turmeric powder. -1/4tsp
Ingredients:-
Bitter gourd. -2 medium size
Potato. -2 medium size.

For grinding the Coconut masala paste:-
Grated Coconut. - 3/4 cup
Dry Red chillies. -5
Turmeric powder. -1/4tsp
For seasoning:-
Coconut oil. -2tsp
Urad dal. -1 tsp
Mustared seeds. -1tsp
Methi seeds. -1/4tsp
Instructions:-
1. Wash and chop the Bitter gourd, remove the seeds and finely chop the Bitter gourd and keep aside.
2. Peel the skin,wash and finely chop the Potatoes and keep aside.
3.Grind the grated Coconut, Dry Red chillies and Turmeric powder to a paste without adding water or adding 2tbsp of water and keep aside.
Method:-
1. Heat Coconut oil in a pan and add Urad dal and saute well.
2. When Urad dal starts to change its colour splutter Mustard seeds and saute well.
3. Add Methi seeds and fry well in oil.
4. Add the finely chopped Bitter gourd pieces and stir well.
5. Add finely chopped Potato pieces and stir well.
6. Add 1/2 cup of Water and required Salt .Mix well.
7. Cover the pan with a lid and cook the Bitter gourd and Potato pieces till soft. Saute in between.
8. Add dry Mango pieces and mix well. Cook for 2 minutes on low flame.
9. Add the ground Coconut Masala paste and mix well with the cooked Potato pieces and Bitter gourd pieces. Cook for 3 minutes.Saute in between and switch off the flame.
10. A tasty and delicious Karathe Sukke is ready to serve as a side dish for Rice , Chapathi etc.
Note:-
Adding of Potatoes to the curry will reduce the bitterness of the Karathe /Bitter gourd.
