Ridge Gourd and Potato Curry is a very simple and easy to make gravy dish using very few ingredents and goes well with hot steamed Rice.

Ingredients:-
Ridge gourd. -1tender.
Potato. -1 medium size
Greenchilly. -3
Mustard seeds. -1 tsp
Cooking oil. -1tsp
Salt. -to taste.
Instructions:-
Wash the tender Ridge Goud and trim both the ends.Chop into 1inch lengthy pieces and keep aside.
Peel, wash and chop Potato into 1inch lengthy pieces and keep aside.
Wash and half slit Green chillies lengthwise and keep aside.
Method:-
Heat oil in a pan and splutter Mustard seeds and saute well.
Add slit Green chillies and fry in oil.
Add chopped Potatoes and saute well.
Add chopped Ridge gourd and saute well.
Add 1cup of Water and stir well.Cover the pan with a lid and cook on low flame till the Potato and Ridge gourd become soft.
Add required Salt and mix well.
Add a pinch of Hing powder and mix well.
Cover the pan and cook again for 2 minutes on low flame and switch off the flame .
A very simple, tasty and delicious Ridge Gourd and Potato Curry is ready to serve with hot steamed Rice.
