Sweet and Spicy Gooseberry Pickle.

Sweet and Spicy Gooseberry Pickle made with Indian Gooseberries, Jaggery and other Spices.The following ingredients are needed to prepare Sweet and Spicy Gooseberry Pickle.

Ingredients:-

Gooseberry.            -10 large and fresh
Jaggery.                  - 4tbsp grated
Water.                      -1cup
Black Pepper          -1tsp crushed
Red chilly powder. -1tsp
Turmeric powder.   - a pinch -1/2 tsp
Cardamom pods.    - 4
Salt.                        -1/2 tsp

Instructions:-

Wash the Gooseberries and pat dry them with a clean cloth and keep aside.

Grate the Jaggery and keep aside.

Peel the Cardamom pods and crush it to make Cardamom powder and keep aside.

Crush the Black Pepper corns and keep aside.

Method:-

Boil 1cup of water in a wide pan and add the Gooseberries. Boil and cook the Gooseberries in water for 5 minutes on low flame without breaking. Do not over cook the Gooseberries,and if over cooked they may break into segments.

Remove all the boiled and cooked
 whole Gooseberry from the pan and keep aside on a clean plate.

In the same pan add grated Jaggery and mix with the boiled water in the pan. Boil the grated Jaggery on low flame till all the Jaggery is melted.

Add Red chilly powder and a pinch of Turmeric powder in the pan and mix with the melted Jaggery. Stir well and boil the mixture on low flame.

Add required Salt and mix well.

Sprinkle crushed Black Pepper and crushed Cardamom and stir well until the syrup becomes little thick.

Add the boiled Gooseberries and mix well till the spicy Jaggery syrup is nicely coated with the boiled Gooseberries.

Switch of the flame and allow the syrup to cool.

When cooled transfer the sweet and spicy Gooseberry Jaggery Syrup into a dry and clean glass bottle. Shake the bottle to mix the Jaggery syrup with the boiled Gooseberries.

A very tasty, sweet and spicy Gooseberry Pickle is ready to serve with  Chapathi, Roti, Phulkas, Dosa, Paratha etc.

This sweet and spicy gooseberry pickle will last for a month if stored them in a refrigerator.
