Instant Cranberry Pickle


A very tasty and delicious home made Instant Cranberry Pickle made with ripe Cranberries. Cranberry is a berry fruit rounded reddish-black in colour when ripen and are very sour in taste. Cranberries are rich in Vitamins and Minerals and are a good source of Fiber. Cranberries helps to protect the body against infections such as cold, fever, skin infections, Urinery track infections etc.

The following ingredients are needed to prepare Instant Cranberry Pickle.

Ingredients:-

Cranberries. - 30
Salt.              - to taste

For Seasoning:-

Cooking oil.                     - 2tsp + 1tsp
Urad dal/ Black gram.      -1/2tsp
Mustard seeds.                  -1tsp
Fenugreek seeds.               -1/4tsp
Red chilly powder.            -1tbsp
Water.                                -1cup
Hing powder /Asafoetida. -1/2tsp


Instructions:-

1. Wash the Cranberries in water and wipe with a clean cloth.


2. Chop the Cranberries each into halves.


3. Apply little Salt and keep aside for 5 minutes.


Method:-

1. Heat 2tsp Cooking oil in a pan and add Urad dal (Black gram) and saute well.

2. When Urad dal starts to change its colour splutter Mustard seeds and saute well.

3. Add Fenugreek seeds and saute well.

4. Add the chopped Cranberry halves into the pan and saute well on low flame for 2 minutes.

5. Add Red chilly powder into the pan and mix well with the Cranberries on low flame. Cranberries are very sour in taste. So adding the amount of Red chilly powder depends on how sour the Cranberries are.

6. Immediately add 1cup of water and mix well.

7. Add required Salt and mix well. Boil and cook the Cranberries till soft on low flame.(Taste the Pickle and check Salt,and add more Salt if needed).

8. Add Hing powder [Asafoetida] and mix well.Boil for a minute and switch of the flame.

9. Add 1tsp Cooking oil on the Cranberry Pickle and mix well.

10. A tasty and delicious instant Cranberry Pickle is ready to serve with dosa, Idli and also as a side dish with Rice.

Note:-

When the Cranberry Pickle cools down transfer the Pickle into a clean, dry and air tight glass bottle. Store the Pickle in the refrigerator for a longer shelf life. Always use clean and dry spoon to take out the Pickle from the bottle. It stays fresh in the room temperature for upto 2 weeks.
