Kappa Ularthiyathu (Kerala style Tapioca Stir Fry)


Tapioca is called Kappa in Kerala. Kappa Ularthiyathu is a Kerala style tasty stir fry made with Tapioca. The following ingredients are needed to prepare Kappa Ularthiyathu /Kerala Style Tapioca  Stir Fry.

Ingredients:-

Tapioca /Kappa     -1/2kg
Grated Coconut.    -1/cup
Dry Red chillies.    -2
Curry leaves.          -1 spring
Red chilly powder. -1tsp
Turmeric powder.   -1/2tsp
Hing powder.          -1/2tsp
Mustard seeds.        -1tsp
Salt.                         -to taste
Coconut oil.             -2tsp

Instructions:-

Peel the outer skin and wash the Tapioca in water. Chop the Tapioca into medium size pieces.Wash the Tapioca pieces 2 / 3 times in water and keep aside.

In a vessel add the Tapioca pieces and add water just to cover the pieces and boil the Tapioca for 2 minutes. Drain the water completely.

Again add the Tapioca pieces in the vessel and add required water and required Salt. Boil and cook the Tapioca pieces till soft. Drain water and keep aside the cooked Tapioca pieces.

Method:-

Heat Coconut oil in a pan and splutter Mustard seeds and saute well.

Add dry Red chilly pieces and Curry leaves. Saute well.

Add the grated Coconut and fry it for 2 minute on low flame.

Add Red chilly powder, Turmeric powder and Hing powder. Saute well.

Add the cooked Tapioca pieces and mix well. Stir continuously for 3 minutes till all the ingredients are mixed well. Switch off the flame.

A  very tasty Kerala style Tapioca Stir Fry/ Kappa Ularthiyathu is ready to eat.

Note:-

You can add Shallots also along with dry Red chilly pieces and Curry leaves.
