Sambar Powder is an aromatic spice powder made with a mixture of Indian spices. Sambar Powder is used to make varieties of Sambar.Sambar is a south Indian mixed vegetable curry served as a main side dish with Rice, Dosa, Idli etc.
The following ingredients are needed to prepare Sambar Powder / Home made Sambar Powder.
Ingredients:-
Coriander seeds. - 4 tbsp
Whole white Urad dal. -2 tbsp
Dry Red chillies. -16 or 18
Chana dal. -1tbsp
Fenugreek seeds. -1/2 tsp
Black Pepper corn. -1tbsp
Cumin seeds. -2 tsp
Turmeric powder. -1tsp
Hing powder [asafoiteda]. -1tsp
Instructions:-
Heat a Pan on low flame and add Coriander seeds and roast well till nice aroma comes out. Keep aside the roasted Coriander seeds on a clean and dry plate.
In the same pan add Chana dal.Saute well and dry roast on low flame until Chana dal becomes light golden colour. Keep aside the roasted Chana dal on the same plate.
In the same pan add Whole white Urad dal and dry Red chillies and dry roast together on low flame until Urad dal becomes golden colour and Red chillies become crisp. Keep aside the roasted Urad dal and dry Red chillies on the same plate.
Add Black Pepper corns and Cumin seeds in the same pan and roast on low flame and remove from pan and keep aside.
Dry roast Fenugreek seeds on low flame till they get browned and keep aside.

Always use clean and dry spoon to take out the Sambar powder from the container. So the Sambar Powder will last for a longer period.
The Sambar Powder can be made in bulk and can be stored in airtight container.
Mix all the dry roasted ingredients together. Add Turmeric powder and Hing powder and mix well.
When little cooled grind all the above ingredients together to a smooth powder.
