Carrot Rice is a healthy and delicious rice dish made in pressure cooker with freshly grated Carrot, Basmati rice and other Spices. This tasty Rice dish goes well as lunch, dinner, or as a tiffin box lunch. Carrot Rice is served with Cucumber Raita.
The following ingredients are needed to prepare Carrot Rice.
Ingredients:-
Basmati rice. -2 cup
Water. -4 cup
Salt. - to taste
Ghee. - 2 and 1/2 tsp
Cinnamon. -3 sticks
Cloves. -5
Cardamom. - 4
Ginger Garlic paste - 2tsp
Onion. - 2 finely chopped
Carrot. - 1cup grated
Pepper powder. -1tsp
Instructions:-
Wash and soak 2 cup Basmati rice for 30 minutes.Then discard the soaked water and keep aside the soaked Basmati rice.
Scrap and remove the thin outer skin of the Carrots. Wash and grate the Carrots and keep aside.
Peel, wash and finely chop Onion and keep aside.
Method:-
Heat 2 and1/2 tsp Ghee in a pressure cooker. Add Cinnamon, Cloves, Cardamom, Ginger Garlic paste and saute well.
Add finely chopped Onion, grated Carrot and 1tsp Pepper powder. Saute well till the Onion becomes translucent.
Add soaked Basmati rice and 4 cup of Water into the cooker vessel.Add required Salt and mix everything well.
Cover the cooker vessel with the lid and cook.Switch off the flame just before the start of the second whistle.
After few minutes open the cooker lid and transfer the Carrot Rice to serving plates.
A tasty Carrot Rice is ready to serve hot with Cucumber Raita.
CUCUMBER RAITA RECIPE
Ingredients:-
Cucumber. -1
Green chillies. -2
Onion. -1
Curd. -1cup
Salt. - to taste.
Instructions:-
Wash and chop a Cucumber into small pieces and keep aside.
Wash and finely chop 2 Green chillies and keep aside.
Peel, wash and finely chop one Onion and keep aside,
Method:-
in a bowl mix together freshly chopped Cucumber pieces, finely chopped Green chillies, finely chopped Onion and 1cup Curd.Add required Salt and mix well.
