Ghosale Ambat is a Konkani style coconut based Ridge gourd Dal Curry goes well as a side dish with Rice.
The following ingredients are needed to prepare Ghosale Ambat/ Ridge gourd Dal Curry.
Ingredients:-
Ridge gourd. - 1big
Potato. -1big
Toor dal. -1/2 cup
Turmeric powder. -1/4 tsp
Salt. - to taste
For grinding the Coconut Masala paste:-
Grated Coconut. -1 cup
Red chillies. -5
Tamarind. - a small gooseberry size
For Seasoning:-
Coconut oil /Oil. -1tsp
Curry leaves. -1spring
Hing powder. -1tsp
Instructions:-
1). Slightly scrap the sharp outer skin of the Ridge gourd (do not scrap the full green outer skin) and wash well and chop into 1 inch lengthy pieces and keep aside.
2). Peel and chop Potato into 1inch lengthy pieces and keep aside.
3). Wash and Pressure cook Toor dal along with chopped Potato pieces, chopped Ridge gourd pieces, Turmeric powder and 2 cup of water for 3 whistles and keep aside.
4). Heat little oil in a pan and roast the Red chillies.Grind the grated Coconut along with roasted Red chillies and Tamarind to a smooth paste adding very little water and keep aside.
Method:-
1). In a cooking vessel add the pressure cooked Toor dal, Potato pieces and Ridge gourd pieces from the cooker vessel.
2). Add required Salt and mix well. Boil and cook for 2 minutes on low flame.
3). Add the ground Coconut Masala paste into the vessel.
4). Mix the ground paste with the cooked Ridge gourd and Potato pieces and boil for 2 minutes on low flame and switch off the flame.
5). Heat Coconut oil or any cooking oil in a pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and Hing powder and mix well.
6). Pour the above seasoning into the cooking vessel and mix vessel.
7). Switch off the flame.
8).Transfer the curry from the cooking vessel to a serving bowl.
