Potato Brinjal Stir Fry (Kook Vaingana Upkari)


Potato is called Kook and Brinjal is called Vaingan in Konkani. Kook Vaingana Upkari is a tasty and simple stir fry made with Potato and Brinjal. A tasty and delicious stir fry goes well as a side dish with rice and dal curry, chapathi etc.

The following ingredients are needed to prepare Potato Brinjal Stir Fry (Kook Vaingana Upkari).

Ingredients:-

Potato.                   - 4
Brinjal.                   - 3
Red chilly powder. -1 and 1/2tsp
Hing powder.         -1tsp
Turmeric powder.   -1/4tsp
Mustard seeds.      -1/2tsp
Salt.                        - to taste
Oil.                          - 2tsp

Instructions:-

Peel and chop Potatoes into 1inch lengthy pieces. Wash well and keep aside.

Chop the Brinjals vertically into two pieces and again chop into 1/4 inch horizontal pieces and keep aside in water.

Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add Red chilly powder, Hing powder and Turmeric powder. Saute well on low flame.

Add the chopped Potato pieces and 1/4 cup of water. Cover and cook the Potato pieces for 5 minutes on low flame.

Drain the water and add the chopped Brinjal pieces into the pan and saute well.

Add required Salt and 1/4 cup of water into the pan and mix well .

Cover the pan and cook the Brinjal pieces and Potato pieces on low flame till soft. Stir in between. Switch off the flame.

Transfer the Potato Brinjal stir fry to a serving bowl.



A tasty Potato Brinjal Stir Fry / Kook Vaingana Upkari is ready to serve as a side dish with rice and dal curry, chapati etc.
