Sauropus androgynus is the botanical name of Multivitamin plant.It is a home grown medicinal plant and also known as Chekurmanis. In Kerala, India it is called Madhura Cheera (Sweet Leaves). The leaves of the Multivitamin plant are good source of vitamins, protein and minerals and has many health benifitory factors.
The following ingredients are needed to prepare Vitamin Leaves Potato Stir Fry/ Mudhura Cheera Potato Stir Fry.
Ingredients:-
Potato. -3 medium size
Viitamin leaves (Madhura Cheera). -1 and 1/2 cup (tender leaves)
Onion. -1
Cooking oil. - 2tsp
Mustard seeds. -1/2tsp
Red Chilly powder. - 3tsp
Hing powder. -1tsp
Salt. - to taste
Instructions:-
The following ingredients are needed to prepare Vitamin Leaves Potato Stir Fry/ Mudhura Cheera Potato Stir Fry.

Mustard seeds. -1/2tsp
Red Chilly powder. - 3tsp
Hing powder. -1tsp

Seperate the tender Vitamin leaves Madhura Cheera from its stem.Clean wash and chop the tender leaves into small pieces and keep aside.
Peel and chop Potato into 1inch lengthy pieces. Wash the chopped Potato pieces and keep aside.
Peel and roughly chop Onion and keep aside.
Method:-
Heat oil in a pan on low flame and splutter Mustard seeds and saute well.
Add chopped Onion pieces and saute well till Onion pieces become translucent.
Add Red chilly powder and Hing powder. Saute well on low flame for a second.
Add the Potato pieces, required Salt and sprinkle very little water. Cover and cook the Potato pieces on low flame for 5 minutes. Saute in between.
Add chopped Vitamin leaves and saute well. Cover and cook the leaves for 5 minutes without adding water. Saute in between. Water will ooze out from the leaves. Cook the leaves till the water completely evaporates and cooked well on low flame.
A tasty and healthy Vitamin Leaves Potato Stir fry / Madhura Cheera Potato Stir Fry is ready to serve as a side dish with Rice and dal curry.
