Instant Tomato Curry


 A tasty instant tomato curry adding spices and jaggery, goes well as a side dish with dosa, idli, chapathi and also with rice.The following ingredients are needed to prepare Instant Tomato Curry.

Ingredients:-

Tomatoes.              - 3
Green chillies.        - 2
Curry leaves.          -1spring
Turmeric powder.   -1/4tsp
Red Chilly powder -2tsp
Coriander powder.  -2tsp
Hing Powder.          -1/2tsp
Jaggery.                   - a marble size
Mustatd seeds.         -1/2tsp
Salt.                          - to taste
Oil.                            -2tsp

Instructions:-

Wash and chop Tomatoes into small pieces and keep aside.

Wash and chop Green chillies into 1/2 inch pieces and keep aside.

  Grate a marble size Jaggery and keep aside.

Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add Curry leaves and fry for a second.

Add the chopped Tomato pieces and saute well.

Cover the pan and cook the Tomato pieces on low flame till mushy without adding water.

Add Turmeric powder, Coriander powder, Red chilly powder and Hing powder. Saute well and cook for 2 minutes.

Add required Salt, chopped Green chilly pieces and crushed Jaggery. Saute well and cook till the Jaggery melts. Switch off the flame.

A tasty Instant Tomato Curry is ready to serve as a side with Chapathi, Rice etc.
