Mulaku Bajji / Chilli Fritters.

Chilli Fritters / Mulaku Bajji is a very tasty and delicious deep fried tea time snack.

The following ingredients are needed to prepare Mulaku Bajji/ Chilli Fritters.

Ingredients:-

Banana chillies.      - 4 or 5
Besan / Gram flour. -1 cup
Rice flour.                - 2 tsp
Red chilly powder.   -1/4tsp
Turmeric Powder.     - a pinch
Hing Powder.            -1/2 tsp
Baking soda.              - a pinch (optional)
Salt.                            - to taste
Oil.                             - for deep frying.

Ingredients:-

1. Wash and pat dry the Banana chillies with a clean cloth and keep aside.

2. Make a slit lengthwise in the middle of each whole Banana Chillies (without completely splitting the Chilly into two halves) and remove the seeds. Apply little Salt and keep aside the Banana chillies for 20 minutes to marinate.

3. In a mixing bowl add Gram flour, Rice flour, Red Chilly powder, Turmeric powder, Hing powder and Salt. Mix all the ingredients and add required water little by little to make a semi thick batter. Keep aside.

Method:-

1. Heat oil in a deep frying pan on high flame.
Once the oil is hot reduce the flame to medium heat.

2. Dip each whole Banana chilly into the semi thick batter. Immerse it completely in the batter.


3. Put the chillies one by one into the hot oil and deep fry on medium flame till golden colour on all sides.

4. Turn the Chillies in hot oil with a slotted spoon and deep fry on medium flame till golden colour on all sides.

5. Remove from hot oil with the slotted spoon when the chillies are cooked on both sides and become crisp and golden colour. Drain on a tissue paper to absorb excess oil.Mulaku Bajji / Chilli Fritters are ready to serve.

6. Transfer the Mulaku Bajji / Chilli Fritters to a serving plate and serve hot with Tomato sauce.
