Yam is called Surnu in Konkani. Surna Pachatti is a very delicious Kochi GSB Konkani style curd and coconut based deep fried Yam curry.
The following ingredients are needed to prepare Surna Pachatti.
Ingredients:-
Elephant Yam (Surnu). - a small piece.
Salt. - to taste
Curd. -1cup
Oil . - for deep frying
For grinding Coconut masala paste:-
Grated Coconut. -1cup
Dry Red chillies. - 4
Turmeric powder. -1/4 tsp
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1/2tsp
Cumin seeds. -1/2tsp
Curry leaves. -1 spring
Instructions:-
1. Chop and remove the outer skin of the Yam (Surnu) and wash well. Chop the Yam into 1/2 inch lengthy little thin pieces.Apply little Salt and keep aside for 15 minutes. Then squeeze the Yam pieces well and remove the water completely. Deep fry the Yam pieces in hot oil till crisp. Keep aside the deep fried Yam pieces (Surna phadi).
2. Whisk the Curd adding little water and keep aside.
3. Grind the grated Coconut along with Red chillies and Turmeric powder to a smooth paste and keep aside the ground Coconut masala paste.
Method:-
1. In a wide pan add the ground Coconut masala paste, required Salt and 1cup of water. Mix well and cook till it boil.
2. Lower the flame and add the whisked Curd and mix well with the Coconut masala paste.
3.Boil on low flame till the first bubbles begins to appear. Mix well and switch off the flame.(Do not boil too much, the curry will curdle)
4. Heat oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds and saute well. Add Curry leaves and fry well.Switch off the flame.
5. Pour the above seasoning into the curry in the wide pan.
6.Transfer the curry to a serving bowl and add the deep fried Yam pieces (Surna padi) into the curry and mix well.(You can add the deep fried crispy Yam pieces into the curry just before serving.)
A tasty and delicious Surna Pachatti is ready to serve with Rice.
