Capsicum Rice


Capsicum Rice is a tasty and flavoured rice dish.The following ingredients are needed to prepare Capsicum Rice.

Ingredients:-

Basmati rice.           -1cup
Water.                      -2cup
Capsicum.               -1
Onion.                     -2 medium size
Carrot.                     -1
Frozen Green peas. -1/2 cup
Salt.                         - to taste
Grated Coconut.      -1/2cup
Green chillies.         -3
Ginger.                    - a small piece
Garlic.                     -2 cloves
Coriander leaves.    - few
Mint leaves.            - few
Ghee.                      -2tsp + 3tsp
Cinnamon.              -1stick
Bay leaves.             -2
Cloves.                   -3
Cardamom.            - 4
Cashew nuts.         -10

Instructions:-

 Wash and soak Basmati rice in water for 20 minutes. Then drain water completely and keep aside.

 Heat 2tsp Ghee in a cooker vessel and fry the Cashewnuts till golden colour. Remove the fried Cashewnuts from the cooker vessel and keep aside on a plate.

Add Bay leaves, Cinnamon, Cloves and Cardamom in the cooker vessel and fry well.Add the soaked Basmati rice into the cooker and fry well for a minute.

Add 2 cup of water and little Salt into the cooker and mix well. Cover the cooker vessel with  the lid and cook the rice for 2 whistles and switch off the flame.

 When cooled open the cooker lid and gently fluff the cooked rice with a fork.
Transfer the cooked Basmati rice to a bowl and keep aside.

Grind grated Coconut along with Green chillies, Ginger, Garlic, Mint leaves and Coriander leaves to a smooth paste adding 2 tbsp of water. Keep aside the ground Masala paste.

Method:-

1. Heat 3tsp Ghee in a wide bottom kadai and add finely chopped Onion and saute well till the Onion pieces become translucent.

2. Add grated Carrot, frozen Green peas and chopped capsicum pieces into the kadai Saute well and sprinkle little water.Cover and cook on low flame till the vegetables become little soft.

3. Add Tomato sauce into the kadai and mix well.

4. Add the ground Masala paste into the kadai.

5. Saute well till the raw smell of the ground Masala paste goes away.

6. Add cooked Basmati rice into the kadai.

7. Mix well and cook on low flame for 2 minutes till the rice nicely coated with all the ingredients in the kadai.

8. Add few fried Cashew nuts into the Kadai and mix well.

9. Transfer the Capsicum Rice to a serving bowl and garnish with fried Cashewnuts.

A tasty Capsicum Rice is ready to serve hot with plain Curd or Onion Raita.
