Kadgi Chakko / Tender Jackfruit Coconut Masala Stir Fry.( Konkani Recipe)


Kadgi Chakko is a Konkani style tender Jackfruit coconut masala stir fry.A very tender Jackfruit in which no seeds are developed are used for making this recipe. A detailed recipe and step by step method with photos.

The following ingredients are needed to prepare Kadgi Chakko.

Ingredients:-

Tender Jackfruit. -1 small in which seeds are not developed
Salt.                     - to taste

For grinding the Coconut Masala paste:-

Grated Coconut. -1cup
Coriander seeds. -2tsp
Urad dal.             -1tsp
Dry Red chillies. - 4
Tamarind.             - a gooseberry size

For Seasoning:-

Coconut oil.     -2tsp + 2tsp
Urad dal.          -1/2tsp
Mustard seeds. -1tsp
Curry leaves.    -1spring

Instructions:-

1. Take a small tender Jackfruit in which seeds are not developed. Chop the stem and cut the tender Jackfruit into 1and 1/2 inch lengthy slices.Chop and remove the outer thorny skin.

2. Wash the tender Jackfruit slices and chop into medium cubes and put the tender jackfruit cubes in a pressure cooker.

3. Add required Salt and 1cup of water into the pressure cooker. Cook for 2 whistles and keep aside. Do not over cook the Jackfruit cubes.

4. Once the pressure is released remove the cooked Jackfruit cubes from cooker vessel.Drain all the water and keep them on a plate.

5. Gently smash the cooked Jackfruit cubes with your hands and keep aside.

6. Heat little oil in a pan and roast Red chillies, Urad dal and Coriander seeds on low flame till Urad dal becomes golden colour.

7. Grind all the roasted ingredients along with grated Coconut and Tamarind to a coarse dry paste. Keep aside the ground Coconut Masala paste.

Method:-

1. Heat Coconut oil in a pan and add Urad dal and saute well. Splutter Mustard seeds and saute well. Add Curry leaves and fry for a second.

2. Add the ground Coconut Masala paste into the pan and mix well.

3. Add the cooked and slightly mashed Jackfruit cubes into the pan and saute well.

4. Add required Salt and 2 tbsp of water into the pan and mix well.

5. Cover the pan with a lid and cook the Jackfruit cubes for 3 minutes on low flame. Saute in between.

6. Add 2tsp Coconut oil over the Kadgi Chakko/ Tender Jackfruit Coconut masala stir fry.Mix well and switch off the flame.

7. Transfer the Kadgi Chakko to a serving bowl.

A very tasty Kadgi Chakko / Tender Jackfruit Coconut Masala Stir Fry is ready to serve as side dish with rice.
