Koduve Sukke [GSB konkani Recipe]


Koduve Sukke is a GSB Konkani style coconut masala curry made with Koduvi leaves.Koduvi is a small slightly bitter leaves known as Kaipa cheera in Malayalm.We can make varieties of Konkani dishes with Koduvi leaves like Koduve Ghassi, Koduve Humman, Koduve Polo[Dosa] etc. A detailed recipe of Koduve Sukke and step by step method with photos.

The following ingredients are needed to prepare Koduve Sukke.

Ingredients:-

Koduve leaves. -3 cups
Salt.                  -to taste

For Coconut Masala mixture:-

Grated Coconut.   -1cup
Dry Red chillies.  -5
Turmeric powder. -1/4tsp
Tamarind.              -a gooseberry size

For Seasoning:-

Coconut oil.     -2tsp
Urad dal.          -1tsp
Mustard seeds. -1tsp

Instructions:-

1. Remove the roots, clean and wash the Koduvi leaves thoroughly in water for a couple of times. Drain the water and finely chop the Koduvi leaves and keep aside.

2. Grind grated Coconut, dry Red chillies, Turmeric powder and Tamarind to a coarse paste without adding water. Keep aside the ground Coconut Masala mixture.
Method:-

1. Heat Coconut oil in a pan and add Urad dal and saute well. Splutter Mustard seeds and saute well.

2. Add the finely chopped Koduvi leaves into the pan and saute well.

3. Add required Salt into the pan and mix well. Cover and cook the Koduvi leaves for 3 minutes.

4. Add the ground Coconut Masala mixture into the pan.

5. Mix the Coconut Masala mixture with the cooked Koduvi leaves. Cook for 2 minutes on low flame and saute in between.


6. Mix well till the Coconut Masala mixture and the Koduvi leaves absorbs the water completely. Switch off the flame.

7. Transfer the Koduve Sukke to a serving plate.

 Koduve Sukke is ready to serve as a side dish with rice and dal curry
