Tendli Bhaji (Konkani Recipe)


Tendli Bhaji is a Goan Konkani style Ivy gourd masala stir fry goes well as a side dish with roti, rice and dal curry.

The following ingredients are needed to prepare Tendli Bhaji.

Ingredients:-

Ivy gourd.               - 20
Onion.                   -2 medium size
Grated Coconut.    -1/4 cup
Coriander powder. - 3/4 tsp
Red chilli powder. -1tsp
Turmeric powder.  -1/4tsp
Mustard seeds.       -1tsp
Cumin seeds.          -1/2tsp
Curry leaves.          -1spring
Salt.                        - to taste
Coconut oil.           -3tsp

Instructions:-

1. Wash Ivy gourd /Tendlis in water and remove both the ends.Chop the Ivy gourd into 4 lengthy pieces and keep aside.

2. Peel, wash and finely chop Onion and keep aside.

Method:-

1. Heat oil in pan and splutter Mustard seeds and Cumin seeds and saute well. Add Curry leaves and fry well.

2. Add finely chopped Onion and a pinch of Salt into the pan and saute well till the Onion pieces become translucent and light brown in colour.

3. Add chopped Ivy gourd pieces into the pan and saute well.

4. Add Coriander powder, Turmeric powder and Red chilly powder into the pan and mix with the Ivy gourd and Onion pieces.

5. Add required Salt and 1/2 cup of water into the pan and mix well all the ingredients in the pan.

6. Cover the pan with lid and cook on medium flame till the Ivy gourd pieces become soft and little crunchy.Saute in between.

7. Add grated Coconut into the pan and mix all the ingredients. Saute well till the water evaporates and switch off the flame.

8. Transfer the Tendli Bhaji to a serving plate.

A tasty Tendli Bhaji is ready to serve hot as a side dish with roti, rice and dal curry.
