Ridge gourd Chutney /Ghosale Thambali is a delicious and healthy chutney made with cooked Ridge gourd pieces, grated Coconut, Green chilly, Tamarind and Salt.Ridge gourd is called Ghosale and Chutney is called Thambali in Konkani. A very tasty side dish goes well with dosa, idli and also with rice.A simple and easy to make recipe and step by step method with few photos.
The following ingredients are needed to prepare Ghosale Tambali / Ridge gourd Chutney.
Ingredients:-
Ridge gourd. - 1long size
Grated Coconut. - 3/4 cup
Green chilly. -1
Tamarind. - a marble size.
Salt. - to taste
For Seasoning:-
Coconut oil. - 1 tsp
Mustard seeds. -1tsp
Curry leaves. - 1spring
Instructions:-
1. Remove the outer string like skin of the Ridge gourd and wash well.
The following ingredients are needed to prepare Ghosale Tambali / Ridge gourd Chutney.

Ridge gourd. - 1long size
Grated Coconut. - 3/4 cup
Green chilly. -1
Tamarind. - a marble size.
Salt. - to taste
For Seasoning:-
Coconut oil. - 1 tsp
Mustard seeds. -1tsp
Curry leaves. - 1spring
Instructions:-
1. Remove the outer string like skin of the Ridge gourd and wash well.
2. Chop the Ridge gourd into 1 inch lengthy pieces and keep aside.
Method:-
1. In a cooking vessel add sufficient water and boil well.
2. Add the chopped Ridge gourd pieces into the cooking vessel.
3. Boil and cook till the Ridge gourd pieces become soft.
4. Drain water completely and keep aside the cooked Ridge gourd pieces to cool.
5. Grind grated Coconut and chopped Green chilly along with Tamarind to a coarse paste adding few drops of water. Now add the cooked Ridge gourd pieces and required Salt to the ground paste and grind again to a fine paste.
6. Transfer the ground Ridge gourd Chutney to a serving bowl.Heat oil in a pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and fry well. Switch off the flame.Pour the above seasoning into the Ridge gourd Chutney in the serving bowl.
A tasty Ghosale Tambali / Ridge gourd Chutney is ready to serve as a side dish with dosa, idli and also with rice.
