Dudde Appe / Pumpkin Sweet Appam.


Yellow Pumpkin Appam / Pumpkin Unniappam / Dudde Appe in Konkani is a sweet tea time snack made with yellow Pumpkin. A tasty and easy to make ghee roasted pumpkin sweet appam recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Dudde Appe / Pumpkin Sweet Appam / Pumpkin Paniyaram.

Ingredients:-

Raw Rice.            - 1 cup
Yellow Pumpkin. - 1cup grated
Grated Coconut.   -1cup
Jaggery grated.     -1cup
Cardamom.          - 6
Salt.                     - a pinch
Ghee.                   - for roasting

Instructions:-

1). Remove the outer skin of the Pumpkin. Wash and grate the Pumpkin and keep aside.

2). Grate Jaggery and fresh Coconut and keep aside on a plate.

3). Peel and crush Cardamom and keep aside.

4). Wash and soak Raw Rice in water for 4 hours. Drain water completely and keep aside the soaked Raw Rice.


5). Grind the soaked Raw Rice along with grated Coconut and grated Jaggery to a smooth paste adding 1/2 cup of water.


6). Transfer the ground batter to a bowl.

7).  Add the grated Pumpkin into the ground batter in the bowl.

 8). Mix  well the grated Pumpkin and the ground batter using a ladle.

9). Add crushed Cardamom and a pinch of Salt into the ground batter mixture.

10). Mix the batter again with a ladle and keep aside for 15 minutes to rest.

Method:-

1) Heat a appe pan (paniyaram pan) on high flame. Lower the flame and add 1tsp Ghee in each  cavity (mould) of the appe pan.

2). Mix the batter with a ladle and take a ladle of batter and pour it into each cavity of the appe pan.

3). Cover the appe pan with a lid and cook the appams till the base of the appams become golden colour for about 3 to 5 minutes on medium low flame.

4). When the base of the appam is roasted and cooked well and becomes golden, turn the appams to upside down with a knife tip or with a wooden stick and cook the other side for few minutes on medium low flame.

5). When both sides of the appam are roasted and cooked well, remove the roasted appams from appe pan and transfer to a bowl or a plate.

6). Repeat the above processes of making pumpkin sweet appams with the remaining batter and place the ghee roasted Pumpkin Sweet Appams / Dudde appe to a serving plate and serve hot or warm.

A very tasty and sweet Dudde Appe / Pumpkin Sweet Appam is ready to serve as a tea time snack.
