Pumpkin Mango Pachadi


Pumpkin Raw Mango Pachadi is a curd based tasty dish made with yellow Pumpkin and raw Mango without adding Coconut and goes well with steamed rice. Pumpkin Mango Pachadi recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Pumpkin  Mango Pachadi without  adding Coconut. 

Ingredients:-

Pumpkin.         - 2 cup chopped
Raw Mango.    - 1 mango
Curd.                -1 and 1/2 cup
Onion.              - 2 medium size
Green chilly.     - 3
Ginger.              - 1tsp chopped
Curry leaves.    - 1 spring
Mustard seeds.  -/2tsp crushed
Salt.                   - to taste

For Seasoning:-

Coconut oil.       - 2tsp
Mustard seeds.    - 1tsp
Methi seeds.        - 1/4 tsp (fenugreek seeds)
Dry Red chillies. - 2
Coconut oil.         - 2tsp

Instructions:-

1). Remove the seeds, wash and finely chop the Pumpkin with skin and keep aside.

2). Wash, deseed and finely chop raw Mango with skin and keep aside.

3). Peel and finely chop Onion and keep aside.

4). Peel, wash and chop Ginger into small pieces and keep aside.

5). Wash and chop Green chillies into small round pieces and keep aside.

6). Crush 2tsp raw Mustard seeds and keep aside.

7). Whisk the Curd without  lumps and keep aside.

8). Broke dry Red chillies into halves and keep aside.

Method:-

1). In a wide bottom steel kadai add the finely chopped Pumpkin pieces, finely chopped raw Mango pieces and 3/4 cup of water. Boil and cook on low flame till the water evaporates and the Pumpkin pieces become soft. Switch off the flame.

2). Heat Coconut oil in a small a pan or in a small kadai and splutter Mustard seeds and Methi seeds (Fenugreek seeds), and saute well. Add broken dry Red chilly halves and fry in oil. Add finely chopped Onion, Ginger pieces, Green chilly pieces and Curry leaves into the pan. Saute well till the Onion pieces become translucent. Switch off the flame and remove the pan from heat.

3). Pour the above seasoning into the Pumpkin Mango mixture in the steel kadai and mix well.

4). Add Curd and required Salt into the Pumpkin Raw Mango mixture and stir well.

5). Add crushed  raw Mustard seeds into kadai and mix with the Pumpkin Mango Curd mixture.

5). Transfer the Pumpkin Mango Pachadi to a serving bowl.

A very tasty Pumpkin Mango Pachadii is ready to serve as a side dish with rice.
