Dudhiya Morgelu


Dudhiya Morgelu / Duddiya Morgholu / Morgolu is a sweet Konkani dish made with yellow pumpkin, jaggery and coconut.A simple and delicious Morgelu recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Duddhiya Morgelu.

Ingredients:-

Yellow Pumpkin (Duddhi). - a small Pumpkin
Grated Jaggery.                    - 3 tbsp
Grated Coconut.                  -1/4cup
Urad dal.                              - 1tsp
Mustard seeds.                     - 1tsp
Dry Red chillies.                  - 2
Coconut oil.                          - 1tsp
Salt.                                       - to taste

Instructions:-

1).Chop and remove the outer skin of the Yellow Pumpkin. Then chop the Pumpkin into medium thick pieces and keep aside.


2). Crush Jaggery and freshly grate Coconut and keep aside.

3). Keep aside Urad dal, Mustard seeds and broken dry Red chillies for seasoning.


Method:-

1). Heat 1tsp Coconut oil in a steel kadai and add Urad dal, Mustard seeds and broken dry Red chilly pieces into the kadai.

2). Splutter Mustard seeds and saute well till Urad dal changes to golden colour and the Red chilly pieces roasted in oil on low fame.

3). Add chopped Pumpkin pieces and required Salt into the kadai and saute well.

4). Add grated Jaggery and 1/4 cup of water into the kadai and boil and cook till the jaggery melts in water.


5). When the Pumpkin cubes are half cooked add grated Coconut and saute well.

6). Mix well the grated Coconut with the cooked Pumpkin pieces.

 7). Boil on low flame till the water evaporates and the dish becomes little thick.Then switch off the flame.

8). Transfer the Dudhiya Morgelu to a serving plate.



Dudhiya Morgelu is ready to serve as a sweet side dish.
