Gabbya Vodi /Sun Dried Banana Stem Fryums (Konkani recipe)


Banana Stem Vattal/Vazhapindi Kondattam is called Gabbya Vodi or Gabbya Odi in Konkani. Gabbya Vodi is a ready to fry sun dried banana stem fryums made from black gram (whole white urad dal) and finely chopped raw banana stem adding green chilly, cumin seeds, hing powder and salt.Deep fried gabbya vodi /banana stem fryums goes well with rice or kanji (rice gruels) or as a evening snack.

The following ingredients are needed to prepare Gabbya Vodi / Sun dried Banana Stem Fryums.

Ingredients:-

Whole White Urad dal. -2 cup
Banana stem chopped.  -2 cup
Green chillies.               -5
Hing powder.                 -1tsp
Cumin seeds.                  -2tsp
Salt.                                -1/2tsp

Instructions:-

1). Wash and soak whole white Urad dal (black gram) in water for 2 hours.


2). Chop the banana stem (gabbo in konkani) into thin round pieces and remove the thread likes fiber from the pieces.


3). Again chop the thin banana stem round pieces into very small pieces and keep aside.

4). Wash green chillies and wipe with a cloth.Chop the green chillies into very thin round pieces and keep aside.

Method:-

1). Drain the soaked water and grind the whole white urad dal into a thick smooth and fluffy batter adding very little water. Transfer the urad dal batter to a bowl.Add cumin seeds and finely chopped green chillies into the batter and mix well.

2). Add finely chopped banana stem pieces into the ground urad dal batter and mix well.

3). Add hing powder and required salt (about 1/2 tsp) into the urad dal batter and mix with all the ingredients in the bowl.

4). Take a clean plastic sheet and sprinkle little water mix with little oil on the plastic sheet. Wipe the plastic sheet with a wet cloth. Spread the plastic sheet under the hot sun.Take a small spoon of batter mixture and gently pour it evenly on the plastic sheet leaving little space in between the batter while spreading on the sheet. Or take a small portion of the batter with your hand and keep it evenly on the plastic sheet. Repeat the process with the remaining batter and let it dry under hot sun for the whole day.

5). Keep the plastic sheet again under hot sun to dry the vattal /vodi for 2 more days. After 2 consecutive days gabbya vodi (banana stem vattal/fryum) on the plastic sheet starts to shrink. Take out the shrinked banana stem vattal /gabbya vodi from plastic sheet using your fingers. As they dry the shrinked vattal/ vodi come off the plastic sheet very fast. Keep the banana stem vattals/ fryums/gabbya vodis together on a large plate to dry again till the moisture from it completely dry up.

6). When cool to room temperature store the sun dried banana stem fryums (gabbya vodis) in air tight container. When ever needed take some sun dried banana stem fryums (gabbya vodis) and deep fry them in hot oil and serve with rice or kanji (rice gruels) or as a evening snack.
