Palappam using Raw Rice


Palappam is a Kerala style easy to make soft pancake made using raw rice, adding instant yeast, sugar, salt, grated coconut, cooked rice and other ingredients. Palappam is usually served as a breakfast dish with vegetable kurma /white kurma. Palappam recipe is explained with ingredients and step by step instructions and method with photos.

The following ingredients are needed to prepare Palappam using Raw Rice.

Ingredients:-

Raw Rice.          -2 cup
Grated coconut. -1 and 1/2 cup
Instant yeast.       -1 and 1/2 tsp
Sugar.                  -3tbsp +1tbsp
Salt.                     -1/2tsp
Water.                   - as required

Instructions:-

1). Wash and soak raw rice in water for 4 hours.


2). Grate coconut and keep aside.


3). In a small vessel boil 1and 1/2 cup of water.Add 2 tbsp of soaked raw rice in the boiling water and cook till the rice is 3/4 th cooked. Drain the cooked water and keep aside the cooked rice.

4). Grind the remaining soaked raw rice in a mixer grinder to a smooth and thick paste adding water little by little.


5). Take 2 tbsp of ground thick rice batter from the mixer grinder in a small vessel and heat the rice batter and stir at low flame without adding water for few seconds till you get a thick rice paste called kurukku. Do not over cook the batter. It should be like a thick porridge.


6). Grind again the remaining ground rice batter in the mixer grinder adding prepared cooked rice, grated coconut, heated rice paste (kurukku), 3tbsp of sugar, 1/2tsp salt and required water to a smooth batter of pouring consistency like normal idly batter.

7). Transfer the ground Palappam batter to a large vessel.

8). Prepare yeast solution.In a small glass add 1 and 1/2tsp of instant yeast, 1tbsp of sugar and 1 and 1/4 th cup of luke warm water. Mix well and keep aside for few minutes until a forth appear on the surface.


9). Pour the yeast solution to the Palappam batter in the large vessel and mix the batter well.

10). Keep aside the batter to ferment until it rises up.It takes about 1 to 3 hours to ferment the batter (depends on room temperature).

Method:-

1). Heat a non stick appachatty on medium flame.

2). Mix the fermented batter well with a ladle and take a ladle full of batter.


3). Pour the batter on the hot appachatty.


4). Lift the appachatty holding both sides of the handle and immedietly twist the appachatty in circular motion to spread the batter on it and make a round shape palappam.

5). Cover the appachatty with a lid and cook the batter on low flame till the edges of the Palappam become golden brown.

6). When the edges of the Palappam becomes crispy and the middle portion is soft, remove it from appachatty using a flat spatula.Transfer the crispy palappam to a serving bowl.
Repeat the process of making lacy and crispy palappam with the remaining batter.

7). Serve the tasty Palappam  hot with Vegetable Kurma / White Kurma and enjoy the breakfast dish.
