Ginger Rasam / Inji Rasam

 

Inji rasam / Ginger rasam is a healthy side dish goes well with rice and is very good for digestion. Ginger rasam recipe is given below with step by step photos.

The following ingredients are needed to prepare Ginger Rasam / Inji Rasam

Ingredients:-


Ginger.              - 1 inch piece
Garlic cloves.    - 4 chopped
Tomato.             - 2
Tamarind.          - a gooseberry size
Chana dal.          - 1tsp
Toor dal.             - 1tsp
Dry red chillies.  - 2
Pepper corn.        - 1tsp
Cumin seeds.       - 1tsp
Coriander seeds.  - 1tsp
Turmeric powder. - 1/4 tsp
Hing powder.        - 1/4 tsp
Salt.                       - to taste

For Seasoning:-

Mustard seeds.- 1tsp
Dry red chilly. - 1 broken into bits
Garlic cloves.   - 2 chopped
Curry leaves.    - 1spring
Oil.                    - 1tbsp

Instructions:-

1). Heat a pan and dry roast chana dal, toor dal, dry red chillies, pepper corn, cumin seeds and coriander seeds till nice aroma comes out on medium flame and transfer to a plate to cool.


2). Peel and chop ginger into small pieces. In the same pan dry roast the chopped ginger pieces for 2 minutes on low flame and transfer to the same plate to cool.

3). In a mixer grinder grind the roasted ginger pieces along with all the other roasted ingredients and garlic cloves to a smooth powder without adding water. Transfer the ground rasam powder to a plate.Add hing powder and mix with the ground rasam powder.

4). Soak tamarind in 1cup of water for 5 minutes and grind along with chopped tomato to a smooth paste.Keep aside the ground tomato tamarind paste.

Method:-

1). Heat oil in a pan and splutter mustard seeds. Add broken dry red chilly bits, chopped garlic and curry leaves into the pan and saute well.

2). Add ground rasam powder into the pan and saute well.

3). Add ground tomato tamarind paste and required salt into the pan and saute well.

4). Add 1cup of water or more into the pan to get a rasam consistency.Mix well and boil the ginger rasam.

5). Once the rasam starts to boil add finely chopped coriander leaves into the pan.

6). Mix well and boil the ginger rasam for 2 minutes and switch of the flame.

Transfer the ginger rasam to a serving bowl. A tasty and healthy Ginger Rassm/Inji Rasam is ready to serve hot with rice.
