White Bitter Gourd Coconut Curry
White bitter gourd coconut curry is a very tasty and easy to prepare coconut masala curry made with white bitter gourd and spices adding bilimbi fruits.White bitter gourd coconut curry goes well with rice.
The following ingredients are needed to prepare White Bitter gourd Coconut Curry.
Ingredients:-
White Bitter gourd. -2
Onion. -1
Salt. -to taste
Water. -as required
Coconut oil. -2 tsp
For grinding Coconut Masala Paste:-
Grated coconut. -3/4 cup
Dry red chillies. -5
Urad dal. -2 tsp
Coriander seeds.-1tbsp
Fenugreek seeds.-1/2 tsp
Bilimbi fruits. -5
Coconut oil. -1tsp
Instructions:-
1). Heat 1tsp coconut oil in a pan and roast urad dal, dry red chillies, coriander seeds and fenugreek seeds on low flame. Once cooled grind the roasted ingredients along with bilimbi fruits and grated coconut to a smooth paste without adding water. Keep aside the ground coconut paste.
2). Wash and cut the white bitter gourd into 2 halves lengthwise and remove the seeds. Chop the white bitter gourd into small pieces.
3). Peel and chop onion into thin lengthy pieces.
Method:-
1) Heat 2tsp coconut oil in a wide bottom pan. Add thinly chopped onion and saute well until onion turns slightly brown in colour.
2). Add chopped white bitter gourd pieces and required salt into the pan and fry in oil on low flame.
3) Add 1cup of water into the pan. Boil and cook white bitter gourd pieces till soft.
4) Add ground coconut masala paste into the pan and mix well and cook till it boils on low flame. Switch off the flame.
5). Transfer the white bitter gourd coconut curry to a serving bowl.
White Bitter gourd Coconut Curry is ready to serve hot with rice.
