Irumban Puli Achar / Bilimbi Garlic Pickle


Irumban puli achar also known as chemeen puli achar in Kerala is made with bilimbi fruits. Bilimbi Fruit is called Irumban Puli and Chemeen Puli in Kerala.

The following ingredients are needed to prepare Irumban Puli Achar / Chemeen Puli Achar / Bilimbi Garlic Pickle.

Ingredients:-

Bilimbi fruits.       - 35 or 40
Garlic cloves.        -20
Mustard seeds.      -2 tsp
Fenugreek seeds.  -1tsp
Red chilly powder.-2 or 3 tbsp
Turmeric powder.  -1tsp
Asafoetida.            -1tbsp
Vinegar.                 -1tsp
Salt.                        -to taste
Oil.                         -4 tbsp

Instructions:-

1). Wash fresh bilimbi fruits (irumban puli / chemeen puli) in water and pat dry it with a clean cloth. Chop and remove both the ends of each bilimbi fruits and cut bilimbi into small round pieces. In a glass bowl add chopped bilimbi fruits and 2tbsp salt and mix well with a spoon. Keep aside the salted bilimbi fruits to marinate for 30 minutes.

2).Peel and chop garlic cloves into thin lengthy pieces.

Method:-

1). Heat 4 tbsp oil in wide bottom kadai and splutter mustard seeds and fenugreek seeds (methi seeds).

2). Add chopped garlic cloves into the kadai and saute well till it turns slight golden colour.

3). Drain salt water and add the marinated bilimbi fruits and 1tbsp salt into the kadai and saute in oil for 5 minutes on low flame.

4). Add turmeric powder, red chilly powder, asafoetida (hing powder) into the kadai and mix with the bilimbi fruits.

5). Add 2 tsp vinegar into the kadai and mix with the spicy bilimbi mixture. Once the bilimbi mixture becomes little thick switch off the flame. Remove the kadai from flame.

6). Transfer the pickle to a porcelain bowl and keep aside to cool. Once the pickle is cooled transfer it to a glass bottle. Add 1tsp vinegar over the pickle and close the glass bottle with airtight lid and it stays good.You can also keep the irumban puli achar / bilim garlic pickle bottle in the refrigerator.

Irumban Puli Achar/ Chemeen Puli Achar / Bilimbi Garlic Pickle is ready.
