Watermelon Rind Pickle


A delicious and spicy pickle made with white part of the watermelon rind after removing the thin outer green skin of the watermelon rind. Watermelon rind pickle can be served as a side dish with rice.

The following ingredients are needed to prepare Watermelon Rind Pickle.

Ingredients:-

Watermelon Rind. -1cup chopped (white part only)
Green chilly.          - 8 chopped
Garlic.                    -10 cloves sliced
Ginger.                   -1/2 inch piece
Curry leaves.          -2 spring
Mustard seeds.       -1tsp +1/4tsp
Fenugreek seeds.    -1tsp + 1/4tsp
Red chilly powder. - 2tbsp
Turmeric powder.   - 1/2tsp
Vinegar.                  - 2 tbsp
Water.                     - 2cup
Oil.                         - 3 tbsp
Salt.                        - to taste

Instructions:-

1). Dry roast mustard seeds and fenugreek seeds in a pan and crush them using mortar and pestle and keep aside.

2). Cut a watermelon and collect the watermelon rind after using the pink juicy part of the watermelon. Chop and remove the thin outer green skin of the watermelon rind.Wash and chop the white part of the watermelon rind into small pieces. 

3). In a vessel boil water adding required salt. Add the chopped watermelon rinds in the boiling water and boil again for 10 minutes. Switch off the flame and keep aside the boiled watermelon rinds.

4). Chop ginger, garlic and green chilly into small pieces.Heat 3tbsp of oil in a pan and fry the chopped ginger, garlic and green chilly pieces for a minute and keep aside.

5). Add the boiled watermelon rinds into the same pan and fry them in oil for 5 minutes and keep aside.

Method:-

1). Splutter mustard seeds and fenugreek seeds in oil in the same pan and saute well. Add curry leaves and fry in oil.

2). Add red chilly powder, turmeric powder and crushed mustard seeds and fenugreek seeds into the pan and saute well.

3). Add fried ginger, garlic and green chilly into the pan and saute well. 

4). Add fried watermelon rinds into the pan and mix well.

5). Add required salt and vinegar into the pan and mix with all the ingredients in the pan and switch off the flame.

6). Transfer the watermelon rind pickle to a serving bowl.

A very tas
ty and delicious Watermelon Rind Pickle is ready to serve with rice.You can keep the pickle in the refrigerator and stays good for few more days.

Ponsa Polo (Ripe Jackfruit Dosa)


Ponsa Polo/Ponsa Godu Polo is a Konkani style sweet dosa made with ripe jackfruit bulbs and can be served as a evening snack or as a breakfast dish with a cup of hot tea.Ponsa Polo recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Ponsa Polo/ Ripe Jackfruit Dosa.

Ingredients:-

Jackfruit bulb. -15
Raw rice.         -1 cup
Coconut.          - 3/4 cup
Jaggery.           -1/2 cup
Cardamom.      - 4
Salt.                 - to taste

Ghee.                - for roasting

Instructions:-

1). Wash and soak raw rice in water for 3 hours and keep aside.


2). Clean and chop Jackfruit bulb into halves, grate coconut, crush jaggery, peel cardamom and keep aside.

Method:-

2). Grind the ripe jackfruit bulbs in a mixer grinder along with grated coconut, crushed jaggery, peeled cardamom and little salt to a smooth paste without adding water.

3). Drain soaked water and add the soaked raw rice into the mixer grinder and grind the jackfruit coconut jaggery mixture again to a smooth paste.

4). Transfer the ground batter to a bowl.

5). Add little water into the ground batter and mix well and make a dosa batter of pouring consistency. Ripe jackfruit dosa batter is ready.

Method:-

1). Heat a non stick dosa tawa on medium flame.Take a ladle of batter and pour it on hot tawa and spread on it immediately using the back of the ladle and make a thin dosa.

2). Spread little ghee on all sides and over the dosa.

3). Cover and cook dosa on low flame till the base of the dosa roasted well.

4). Flip the dosa with a flat spatula to cook the other side.

5). Remove the well roasted dosa from hot tawa and transfer to a serving plate.

6). Make ripe jackfruit dosa with the remaining batter and transfer to the serving plate and serve with hot tea.

Tutti Frutti from Watermelon Rinds


Watermelon Rind Tutti Frutti is a home made sweet and colourful tutti frutti with white part of the watermelon rinds and can be used in cakes, cookies and ice creams.Watermelon Rind Tutti Frutti recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Tutti Frutti from Watermelon Rinds .

Ingredients:-

Watermelon.     -1 medium size
Sugar.               -1cup
Water.               - 1cup
Vanilla essence.- 1drop
Food colours.    - a pinch of red, green, yellow and orange colour.

Instructions:-


1). Cut a ripe watermelon and after using the sweet pink fleshy fruit part, collect the harder and less juicy watermelon rind part.


 

2). Chop and remove the green outer layer of the watermelon rinds and wash the white part of the watermelon rinds in water. 


Method:-

1). Chop the white part of the watermelon rinds into very small pieces.


2). In a wide bottom vessel add sugar and water. Stir well and boil on medium flame till sugar dissolves.

3). Add chopped watermelon rind pieces into the boiling sugar syrup in the vessel.

4). Boil and cook the watermelon rind pieces in sugar syrup for 15 to 20 minutes on low flame and stir in between. Switch off the flame and let it cool down.

5). Once cooled to room temperature pour the boiled rind pieces with sugar syrup in 5 seperate bowls.

6). Add a pinch of 4 different food colours in 4 seperate bowls and mix the colours with the sugar syrup in each bowl using a spoon. Add a drop of vanilla essence in one bowl and mix with the sugar syrup. 

7). Place all the sugar syrup bowls on a large plate and allow to soak the rind pieces in coloured sugar syrup for 4 to 5 hours.

8). Drain the sugar syrup from each bowls and spread the soaked watermelon rind pieces on 5 seperate plates and dry the coloured rinds under hot sun.

9). Sun dry the watermelon rind tutti frutti till it becomes dry.

10). Keep the sun-dried watermelon rind tutti frutti together in a bowl or you can store it in a glass bottle with lid and keep in the refrigerator to stay good for longer period.

A tasty, sweet and colourful home made Watermelon Rind Tutti Frutti is ready to use in cakes, cookies and ice creams.

Watermelon Rind Halwa


Watermelon Rind Halwa is a sweet dish made with white part of the watermelon rind.A healthy and delicious watermelon rind halwa recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Watermelon Rind Halwa.

Ingredients :-

Watermelon rinds.    -1 cup
Semolina (Rava).     - 1tbsp
Gram flour (Besan). -1tbsp
Sugar.                      -1/3 cup
Cardamom.              - 4
Nuts.                         - few

Ghee.                        - 2 tbsp

Instructions:-

1). Collect the watermelon rinds.Chop and remove the thin green outer skin of the watermelon rind. Wash well and chop into small pieces and keep aside.



2). Grind the chopped watermelon rinds into a smooth paste and keep aside.

3). Keep aside crushed cardamom, semolina (rava)) and gram flour (besan).

4). Chop the cashews and almonds into small pieces and keep aside.

Method:-

1). Heat 2tbsp ghee in a nonstick pan and roast the chopped cashews and almonds. Remove from ghee and keep aside on a plate.


2). Add gram flour and semolina into the pan and roast in ghee until light golden colour.

3). Add ground watermelon rind paste into the pan and saute well.

4). Add crushed cardamom into the pan and mix with the watermelon rind paste.

5). Stir the watermelon rind paste till it becomes little thick.

6). Add sugar into the pan and mix with the thick watermelon rind paste and stir well.


7). Add ghee roasted cashew nuts and almond pieces into pan and mix well.

8). Keep on stirring the mixture until it becomes a thick paste.

9). Once the halva leaves the sides of the pan switch off the flame.

10). Transfer the watermelon rind halwa to a greased serving bowl.

A sweet and tasty Watermelon Rind Halwa is ready to enjoy.

Hinga Chutney (Konkani Recipe)


Hinga Chutney is a Konkani style asafoetida flavored spicy coconut chutney goes well as a side dish with dosa, idli and also with rice.Hinga Chutney recipe is explained with method and photos.

The following ingredients are needed to prepare Hinga Chutney.

Ingredients:-

Grated Coconut. -1 cup
Dry Red chillies.- 4
Tamarind.           - a marble size
Hing powder.     -1tsp
Salt.                    - to taste

For Seasoning:-

Coconut oil.     -1tsp
Mustard seeds. -1/2tsp
Curry leaves.    - few
Hing powder.    -1/2 tsp
Dry Red chilly. - 1broken into half (optional)

Instructions and Method:-

1). Roast 4 dry red chillies in little oil.Grind grated coconut along with roasted red chillies, tamarind, hing powder and required salt to a smooth paste adding 1/4 cup of water.


2). Transfer the ground chutney paste to a serving bowl.


3). Heat coconut oil in a small pan for seasoning and splutter mustard seeds and saute well. Add curry leaves into the pan and fry in oil for a second. Add hing powder and saute well. Switch off the flame and pour the above seasoning over the ground hinga chutney in the serving bowl.

4). You can add one broken dry red chilly half also in the seasoning along with mustard, curry leaves and hing powder and fry in oil to make the chutney more spicy.(optional)

A delicious Hinga Chutney is ready to serve as a side dish with dosa, idli or with rice.
