Green tender Cucumber is called Toushe in Konkani.Toushe Pachadi is a delicious Cucumber curry prepared with tender Cucumber, Coconut, raw Mustard seeds and Curd.It is usually seved as an accompaniment for Rice.Left over Cucumber Pachadi can be refregerated.The recipe is simple,quick and easy to prepare.
The following ingredients are needed to prepare this delicious Green Cucumber Pachadi.
Ingredients:-
Green Cucumber. -2 cup chopped ( tender)
Green chilly. - 5
Ginger. - a small piece
Curry leaves. - few
Curd. -2 cup[whisked]
For grinding the Masal Paste.
Coconut grating. -1/2 cup
Jeera. -1tsp
Mustard seeds. -1/2 tsp
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. - 1tsp
Curry leaves. -1 spring
Instructions:-
Peel the skin and chop the tender Green Cucumber into very small pieces.Keep aside.
Wash and finely chop green chillies length wise.Keep aside.
Wash clean and finely chop a small piece of Ginger and keep aside.
Wash and half slit Green chillies lengthwise and keep aside.
Crush the raw Mustard seeds using Mortar and pestel and keep aside.
Grind the Coconut grating with Jeera and crushed Mustard seeds to a smooth paste.Keep aside.
Whisk the Curd and keep aside.
Method:-
In a vessel boil little Water and cook the chopped green Cucumber pieces with half slit Green chillies,chopped Ginger pieces and few Curry leaves till the Cucumber is soft and the Water is nicely absorbed.
Add the ground Coconut Masala paste and mix well.
Lower the flame and add the whisked Curd to the cooked Cucumber pieces and mix well with the ground Coconut Masala paste. When the Pachadi starts to boil on low flame, immediately switch off the flame.Otherwise the Curry will cudle.
Heat Coconut oil in a pan and splutter Mustard seeds.Add 1spring Curry leaves and fry for a second. Then switch off the flame.
Add this seasoning over the Pachadi in the vessel.
A lip smacking and tasty Green Cucumber Pachadi/Toushe Sassam is ready to serve as a side dish with hot steamed Rice.
