Banana stem or Banana pith is called Gabbo in Konkani.The inner most part of the Banana stem is called Banana pith (Gabbo.)Remove all the outer skin of a Banana stem till you get a tender part called Banana pith ( (Gabbo)Banana pith is rich in fibres and also has many other medicinal and nutritional benefits.
Gabbya Polthe is a popular Kochi GSB Konkani style curd based dish made from Banana Stem served as a side dish with Rice.This Curry is simple,quick and which does not involve any grinding.Gobbo contains a large amount of fibre with large water content and this recipe is a healthy option to incorporate fibre in your dietYou can use any cooking oil for seasoning.But seasoning in Coconut Oil makes the salad more tasty and delicious.
The following ingredients are needed to prepare this delecious Polthe.
Ingredients :-
Tender Gabbo - a small one
Green chilly. -4
Salt. -to taste
Onion. -1 big
Curd. -1 cup
For Seasoning:-
Coconut Oil. -1tsp
Mustard seeds. -1tsp
Jeera. -1/2 tsp
Curry leaves. - 1spring.
Instructions :-
Choose a very tender and small Banana pith / Vaza pindi(Gabbo) for making Polthe.
With a sharp kitchen knife chop the tender Gabbo [Banana Pith] into very thin round slices.
Remove and discard the string of fibres(net like fibres) between each round slices by rolling them around your finger when you chop the Gabbo into thin roundels.
Put the chopped Gabbo roundels in Water for few minutes.Remove from Water and chop the thin roundels together into a very small square pieces.Keep aside.
Wash and finely chop 3 Green chillies in round slices and keep aside.
Chop one big Onion into very small square pieces.Keep aside.
Method :-
In a mixing bowl add the finely chopped Green Chilly roundels and crush with Salt thoroughly using your fingers.
Add the finely chopped Banana pith/ Gabbo cubes in the mixing bowl .
Mix well the Green chilly Salt mixture with the finely chopped Gabbo cubes.
Add finely chopped Onion and mix with the Gabbo Green chilly mixture.
Add 1cup thick Curd into this Gabbo Green chilly Onion mixture and combine everything well.
Heat 1tsp Coconut oil in a small pan and Splutter Mustard seeds, Jeera and add Currry leaves and fry well. Switch off the flame.
Pour this seasoning into the Gabbya Poltha.
