KAARAATHA & TOMATO THIKSANI HUMMAAN- Kochi Konani GSB style recipe./SPICY BITTER GOURD & TOMATO CURRY

Bitter gourd is called Kaarathe in Konkani. Kaarathe & Tomato Hummaan is a  Kochi Konkani GSB style spicy side dish made with Bitter gourd ,Tomato and Chilly powder.In this recipe kashmiri red chilly powder is used to get good colour to the spicy dish.

The following ingredients are needed to prepare  Kaaraatha & Tomato Thiksani Hummaan /Spicy Bitter gourd and Tomato Curry.

Ingredients:-

Bitter gourd. -1 medium size
Tomato.         -3 medium size
Salt.              -to taste

For Seasoning:-

Coconut oil.          -1tbsp + 1tsp
Urad dal.               -1tsp
Mustard seeds.      -1tsp
Methi seeds.          -10 seeds only
Red chilly powder.-1tbsp (Kashmiri)
Hing powder.         -1/2 tsp

Instructions:-

Wash and finely chop Tomatoes and keep aside.

Wash and chop a medium size Bitter gourd lengthwise and discard all the seeds from it.Wash again and chop the Bitter gourd into thin 1inch lengthy pieces.Apply little Salt and mix well and keep aside for 15 minutes. Then squeeze the salty water from the Bittergourd and keep aside.

Method:-

Heat 1tbsp Coconut Oil in a pan and add Urad dal and saute well.

When Urad dal starts to change its colour splutter Mustard seeds and saute well. Add  Methi seeds and saute well for a second or till a nice aroma of the seasoning comes.

Add chopped Bitter gourd pieces and saute well. Fry the Bitter gourd pieces in oil for a minute.

Lower the flame and add Kashmiri Red chilly powder and mix well with the Bitter gourd pieces.

Add finely chopped Tomatoes and mix well with the Bitter gourd pieces and cook on low flame.

Check for Salt and if needed add little Salt and mix well.



Add little water and mix well. Cover the pan with a lid and cook the Bitter gourd pieces till soft and the Tomato pieces become mushy on medium flame.Saute in between.The consistency of the curry is semi thick.

Add 1/2 tsp Hing powder and mix well. Switch off the flame.

Add 1tsp Coconut oil over the Kaaraatha & Tomato Thiksani Hummann, if you feel it is more spicy.

A very tasty Kaaraatha & Tomato Thiksani Hummaan / Spicy Bitter gourd & Tomato Curry is ready to serve as a side dish with Rice, Dosa or Idli.
