Potato Bonda is a south Indian deep fried snack made with Gram flour& Rice flour batter and stuffed with boiled and mashed Potatoes and other spice masala fillings.
This Potato snack is also known as Kukka Bonda/ Batato Ambado in Konkani and mostly prepared as a evening tea time snack in Kochi GSB homes in Kerala..The recipe is very simple and can be made easily.
The following ingredients are needed to make this boiled and deep fried Potato snack.
Ingredients :-
Potato. -4 medium size.
For Seasoning:-
Oil. -1tbsp
Urad dal. -2tsp
Mustard seeds. -1/2tsp
Green chilly. -5
Ginger chopped. -1tsp
Coriander leaves. -3 spring
Curry leaves. -1 spring
Turmeric powder. -a pinch
Salt -to taste
For batter:-
Besan/Gram flour. -1cup
Rice flour. -2tbsp(to make Bonda more crispy)Optional
Chilly powder. -1/4tsp
Turmeric powder. -a pinch
Hing powder. -1tsp
Cooking soda. - a pinch (optional)
Water. - to make a thick batter
Instructions:-
Wash and Pressure cook Potatoes with skin for 3 whistle till soft.
When cooled peel the skin and mash the cooked Potato well with your hands and keep aside.
Wash and finely chop Green Chillies, Ginger, Curry leaves and Coriander leaves.Keep aside.
Method:-
Heat Oil in a pan and add Urad dal and saute well.
When the Urad dal starts to change its colour,splutter Mustard seeds and saute well.
Add finely chopped Green Chillies and chopped Ginger pieces and saute well.
Add finely chopped Curry leaves and Coriander leaves and saute well.
Add a pinch of Turmeric powder and saute well.
Add required Salt and mix well.
Add boiled and mashed Potato and mix well.Saute well for few minutes and switch off the flame.
When cooled make the Potato mixture into10 or 12 equal size balls with your hands and keep aside.You can make small lemon size balls also to increase the number of Potato Bonda.
In a mixing bowl add Besan, Rice flour, Chilly powder,Turmeric powder, Hing powder and Cooking soda.Add Water little by little and mix everything well to make a thick smooth batter.
If the batter is too thick add little more water and then mix with your hand, for making it neither too thick nor too loose.
Heat Oil on a medium flame in a deep bottom kadai for deep frying .
Dip each Potato balls in the batter gently and drop into the hot Oil one by one and deep fry them until they turned golden colour on both sides.
Turn over the Potato balls in between with a spatula to roast and cookt on all sides.
When well roasted on all sides remove from Oil and drain on a kitchen towel/tissue paper to absorb excess oil.
A yummy Potato Bonda /Batata Ambado/Kukka Bonda/ Aloo Bonda is ready to serve.
Serve the Potato Bonda hot or cool as a snack with Tea or Coffee.
Note:-
There should be little lumps in boiled and mashed Potato mixture.
Cooking soda is optional.If using Cooking soda,prepare the Potato Bonda immediately.
