PUMPKIN SAMBAR with COCONUT MILK. / DUDINI SAMBAR

Duddi in Konkani means Pumpkin.Pumpkin Sambar is a delicious Pumpkin Curry mixed with the  spices paste and diluted Coconut milk.Adding diluted Coconut Milk powder makes the Curry  more delicious.

The following ingredients are needed to prepare this delicious Pumpkin Sambar.

Ingredients :-

Tur dal.                         - 3/4 cup
Pumpkim.                     -1 cup chopped cubes.
Coconut Milk powder. -1 packet (100 gram)
Salt.                              -to taste
Tamarind.                     -a gooseberry size


For grinding Sambar Masala Powder :-

Coconut Oil.        -1/4tsp
Urad dal.              -1tsp
Chana dal.            -1 tsp
Coriander seeds.   -2tsp
Red chilly.             -6
Pepper corn.          -5
Cumin seeds.        - 1tsp
Fenugreek/ Methi. -1/4 tsp
Turmeric powder.  -1/4tsp
Hing powder.  -1/4 tsp


For Seasoning :-

Coconut Oil. -1tsp
Mustard seeds. -1tsp
Red chilly. -1 broken into two halves
Curry leaves. -1 spring



Instructions:-

Wash,clean and pressure cook Tur dal adding  required amount of Water till soft. Keep aside.

Soak Tamarind in little Warm water for 5 minutes. Keep aside.

Chop the hard outer skin of a small Pumpkin.Wash and chop into square cubes.Keep aside.

Heat 1/4tsp Coconut oil in a pan and roast Urad dal, Chana dal, Coriander seeds, Red chillies, Pepper corn, Cumin seeds and Fenugreek until a nice aroma comes out. Switch off the flame and when cool mix Turmeric powder and grind with soaked Tamarind and Hing powder to a fine paste adding very little Water.Keep aside

Dilute the instant Coconut Milk powder with little Water and keep aside.



Method :-

In a cooking vessel boil and cook the chopped Pumpkin cubes with required Water  till soft.

Add the cooked Tur dal and mix with the cooked Pumpkin cubes.Keep on stirring the mixture. It tends to stick at the bottom due to the dal used.

Add required Salt and mix well.

Add the ground Sambar Masala paste and mix well The consistency of the gravy is semi thick.Add Water according to the consistency. Mix and boil well and give a good stir.

Add the diluted Coconut Milk and when the Curry starts to boill switch off the flame.Donot boil the Curry after adding the diluted Coconut Milk.

Heat Coconut oil/ Oil in a pan and splutter Mustard seeds. Add broken Red chilly and Curry leaves. Fry for a second and switch off the flame.

Pour this seasoning into the Pumpkin Sambar/ Duddini Sambar in the cooking vessel and close the vessel with a lid.

A yummy Dudini Sambar/ Pumpkin Sambar with Coconut milk is ready to serve with  plainRice.
