PUMPKIN SAMBAR with COCONUT & SHALLOTS / DUDDHIYA SAMBAR

Duddi in Konkani means Pumpkin.Pumpkin sambar is a delicious Pumpkin curry made by using Shallots and the ground paste of Coconut and other spices.

The following ingredients are needed to prepare this delicious Pumpkin Sambar recipe.

Ingredients:-

Yellow Pumpkin. - 1 cup chopped cubes.

Tomato.                -1
Shallots.               -10
Coriander leaves. -few

Hing powder.       -1tsp
Salt.                     -to taste


For grinding Coconut Masala paste:-

Coconut grating.  -1 cup

Red chillies.          -6or8
Coriander seeds.   - 2tbsp
Chana dal.             -1tsp
Pepper corn.           -1tsp
Jeera/ Cumin seeds.-1/2tsp
Fenugreek/Methi.    -few seeds
Tamarind.               - a small piece


For Seasoning:-

Coconut oil/ Oil.     -1tsp
Mustard seeds.         - 1/2 tsp
Jeera/ Cumin seeds. -1/2 tsp
Curry leaves.           -1 spring
Shallots.                    -2 finely chopped


Instructions:-

1.  Pressure cook 1/2 cup Turdal with 2 cup Water for 4 whistles till soft and keep aside.


2.  Peel the hard outer skin of a small piece of Pumpkin and chop into medium square cubes and wash them and keep aside.




3.  Wash and chop one Tomato into small pieces and keep aside.


4.  Peel the skin and wash 10 shallots. Roast them in little Oil till little translusent and keep aside.


5.  Peel, wash and finely chop 2 big Shallots lengthwise and keep aside.


6.  Clean,wash and finely chop Coriander leaves and keep aside.

7.  In a pan dry roast raw Coriander seeds in low flame and keep aside on a plate.

8.  In the same pan dry roast Chana dal, Pepper corns, Cumin seeds and methi seeds till the dal change to little golden in colour and transfer all the roasted items to the plate.

9.  Heat little Oil in the same pan and roast Red chillies till crisp and transfer to the plate.

10.  In the same pan roast grated Coconut and fry till little golden in colour and transfer to the plate.


11.  When cool mix all the roasted items and add a pinch of Turmeric powder and mix every thing well.

12.  Grind the roasted items along with Tamarind to a smooth paste adding little Water and keep aside.





Method:-

In a cooking vessel add the chopped Pumpkin cubes .Boil and cook till soft.





Add the roasted Shallots, cooked Turdal with little water and chopped Tomato pieces and mix well with the cooked Pumpkin cubes.

\Add required Salt and mix everything well and boil for 2 minutes.




Add the ground Coconut Masala paste and mix well.The consistency of the Sambar is not too thin nor too thickAdd Water according to the consistency.
and boil for few minutes and switch off the flame.



Heat Coconut oil/ Oil in a pan and splutter Mustard seeds.Add Cumin seeds and Curry leaves and fry for a second.



Pour the above seasoning into the Sambar in the cooking vessel.



Heat the same pan and fry the finely chopped 2 Shallots with a pinch of Salt and add the fried Shallots in the cooking vessel.


Add Hing powder and  finely chopped Coriander leaves and mix well.


A tasty Pumpkin Sambar with Coconut and Shallots is ready to serve as a side dis with plain Rice, Doas, Idli etc.
