DEEP FRIED PUMPKIN FLOWER BUD FRITTERS / DUDHIYA KOLO THALLOLA / Pumpkin Fritters


Pumpkin bud fritters is called Dudhiya kolo Thallola in Konkani.In Konkani cuisines Pumpkin is used in various curries,Pumpkin flowers are used to make stir fries and Pumpkin bud is used for making fritters.

The following ingredients are needed to prepare Pumpkin flower bud fritters.

Ingredients:-

Pumpkin flower buds. -10 or 15
Coconut oil/Oil.           -for deep frying

For the Batter:-

Rice flower.                 -3/4 cup
Besan flour                  -3/4 cup
Red chilly powder.      -1tsp
Hing powder/Asafoetida.-1/4 tsp       
Salt.                             -to taste

Instructions:-

1.  Take Pumpkin Flower buds.



2.  Seperate the tender stalks from each Pumpkin flower bud and keep aside.



3.  Remove the green sepals around  the Pumpkin flower buds and keep aside. Discard the green sepals.


4.  Wash the buds in water two three times and drain water completely from the flower buds and keep aside.

5.  Half slit each  Pumpkin flower buds lengthwise and keep aside.


6.  In a mixing bowl add Rice flour, Besan (Bengal gram flour), Red chilly powder, Hing powder and required Salt and mix well. Add Water little by little to make a semi thick batter.
The batter should not be too thick or thin.Keep aside.

Method:-

Heat Coconut oil or cooking oil in a deep frying pan on medium flame.

Dip each half slit flower buds in the prepared batter and slowly put the buds in the hot oil and deep fry them till golden colour on medium flame.

Once the flower buds are slightly golden, gently turn over the buds with a slotted spoon to cook both sides in golden colour.

Remove the cooked flower buds from oil when they become evenly golden brown in colour on all sides.

Drain the deep fried flower buds on a tissue paper to remove the excess oil.

Pumpkin flower bud fritters are ready to serve.


Serve the deep fried Pumpkin bud fritters hot or warm with Tomato Ketchup.
